Risotto ai Funghi Porcini (Porcini Mushroom Risotto)
Why this recipe works
- Deep mushroom flavour: Browning the mushrooms first cooks off excess moisture and concentrates their savoury, earthy character before they are folded back into the rice.
- Naturally creamy rice: Arborio rice releases starch gradually as hot stock is added, creating a creamy texture without needing cream.
- Classic risotto finish: Stirring in cheese and butter off the heat gives the risotto its glossy, fluid finish while keeping the rice al dente.

Timing notes
- Serve straight away: Risotto continues to thicken as it sits, so bring it to the table while it is still loose, creamy and spoonable.
- Short rest for gloss: Covering the pan briefly after adding the cheese and butter helps the risotto settle into a smoother, glossier texture.
Texture tips
- Keep the stock hot: Adding hot stock keeps the rice cooking evenly and helps the starch release steadily for a creamy finish.
- Loosen before serving: If the risotto tightens, stir in a little more hot stock until it flows gently across the plate.
- Stir often, not constantly: Regular stirring encourages creaminess, but too much agitation can make the rice heavy rather than fluid.
Ingredient notes
- Porcini bring the signature flavour: Porcini mushrooms give this risotto its distinctive woodland aroma and deep umami character; use them if available.
- Use a firm grating cheese: Parmigiano Reggiano adds savoury depth and helps finish the risotto with a rounded, creamy texture.
- Wine adds balance: Dry white wine cuts through the richness of the butter and cheese, giving the risotto a cleaner finish.
Ingredient swaps
- Make it without wine: Replace the dry white wine with vegetable stock for an alcohol-free version while keeping the cooking method the same.
- Sharper cheese finish: Pecorino Romano can replace Parmesan for a saltier, more assertive flavour.
- Lighter dairy-free option: Use extra-virgin olive oil instead of butter, noting that the finished risotto will be less rich and glossy.

Instructions
- Pour the vegetable stock into a saucepan and bring it to a gentle simmer, then keep it hot over a low heat. Grate the parmesan and set it aside.
- Finely chop the shallots and roughly slice the mushrooms. Finely chop the fresh parsley.
- Melt half the butter in a large frying pan over a medium-high heat. Add the mushrooms and cook for 6 to 8 minutes until browned and their moisture has cooked off, then scrape them into a bowl.
- Add the remaining butter to the pan and lower the heat to medium. Add the shallots and cook for 2 to 3 minutes until softened but not coloured.
- Stir in the arborio rice and cook for 1 to 2 minutes, stirring, until the grains look slightly translucent at the edges. Pour in the dry white wine and cook for 1 to 2 minutes until it has mostly evaporated.
- Add a ladleful of hot stock and stir until it is mostly absorbed, then continue adding stock a ladle at a time, stirring often. Cook for 18 to 22 minutes until the rice is al dente and the risotto is loose and creamy; you may not need every last drop of stock.
- Fold the mushrooms back in and cook for 1 minute to warm through. Take the pan off the heat, stir in the parmesan and black pepper, then cover and rest for 2 minutes so it turns glossy and creamy.
- Spoon into warm bowls and finish with the parsley. Serve straight away while it is still fluid and creamy.
Recipe notes
Tips
- Keep the stock at a gentle simmer so the risotto stays at an even temperature and cooks more predictably.
- Stir often, but not constantly; you want enough agitation to release starch without turning the rice gluey.
- If the risotto tightens up before serving, loosen it with a small ladle of hot stock and stir until creamy again.
Substitutions
- Replace Dry White Wine with the same amount of Vegetable stock for an alcohol-free version.
- Replace Parmesan with Pecorino Romano cheese for a sharper, saltier finish.
- Replace Butter with Extra-virgin olive oil for a lighter, dairy-free finish (the risotto will be less rich).
Storage
- Refrigerate up to 2 days
- Cool quickly, cover and refrigerate. Reheat gently in a saucepan with a splash of Vegetable stock, stirring until piping hot and creamy; risotto is best eaten fresh.
