Zuppa di Pesce (Italian Fish Stew)
Why this recipe works
- Deep broth, short cooking: Garlic, chilli, white wine and tomato passata create a savoury base quickly without needing a long simmer.
- Seafood added in stages: Mussels, fish and prawns cook at different speeds, so adding them separately helps keep the seafood tender.
- Bright finish: Lemon juice and fresh parsley lift the tomato-rich broth and balance the sweetness of the seafood.

Ingredient notes
- Choose firm fish: Use a firm white fish that will hold its shape in the broth rather than breaking apart as it simmers.
- Check the mussels: Start with fresh mussels whose shells are closed, and discard any that do not open after cooking.
- Add lemon at the end: Finish with lemon juice off the heat so the stew tastes bright without making the seafood tough.
Timing notes
- Serve as soon as it is ready: This stew is at its best just after the seafood has cooked, while the fish is still tender and the mussels are hot.
- Prepare before simmering: Slice the garlic, chop the parsley and cut the fish before starting the broth, as the final cooking stage moves quickly.
Common mistakes
- Boiling the seafood: Keep the broth at a gentle simmer once the seafood goes in; aggressive boiling can make prawns and fish rubbery.
- Adding everything at once: Cooking the mussels, fish and prawns together risks overcooking the most delicate pieces before the shellfish is ready.
Make-ahead tips
- Best eaten fresh: Seafood stews are most delicate on the day they are made, especially once prawns and fish have been cooked.
- Reheat gently: Warm leftovers over low heat until piping hot, stirring carefully so the fish stays in pieces.

Instructions
- Heat the oven to 200°C (390°F). Tear the bread into chunky pieces, toss with 2 tbsp of the olive oil, and toast on a tray for 8 to 10 minutes until crisp and golden.
- Meanwhile, finely slice the garlic and roughly chop the parsley. Cut the fish into large bite-sized pieces and keep chilled while you start the broth.
- Warm the remaining olive oil in a large pot over medium heat. Add the garlic and chilli flakes and cook for 30 to 60 seconds until fragrant, without letting the garlic colour.
- Pour in the white wine and simmer for 2 to 3 minutes to reduce slightly. Stir in the passata, bring to a gentle simmer, and cook for 10 minutes so the flavours meld.
- Add the mussels, cover, and cook for 4 to 6 minutes, shaking the pot once or twice, until they open. Lift the mussels out with tongs, discarding any that stay closed, and keep warm.
- Return the broth to a gentle simmer and slide in the fish; cook for 3 minutes until it is just turning opaque. Add the prawns and cook for 2 to 3 minutes until pink and just cooked through.
- Return the mussels to the pot and take it off the heat. Stir through most of the parsley, squeeze in lemon juice to taste, and ladle into bowls with the toasted bread; finish with the remaining parsley.
Recipe notes
Tips
- Keep the stew at a gentle simmer once the seafood goes in; a hard boil can make fish and prawns tough.
- If you are serving vulnerable groups, make sure the prawns are fully opaque and the mussels are piping hot throughout before serving.
Substitutions
- Replace White fish fillet with Cod fillet for a firmer, flaky result.
- Replace White wine with Dry white wine for a cleaner, crisper broth.
Storage
- Refrigerate up to 2 days
- Cool quickly and refrigerate in a sealed container. Reheat gently in a saucepan over low heat until piping hot, stirring carefully so the fish stays in pieces; toast fresh bread to serve.
