Creole Jambalaya with Andouille Sausage
Why this recipe works
- Layered savoury flavour: Browning the andouille first leaves seasoned fat in the pot, which flavours the vegetables and rice as they cook.
- Efficient one-pot method: The rice simmers directly in the tomato and stock mixture, absorbing the sausage, herb and vegetable flavours without needing a separate pan.
- Hearty but balanced: Smoky sausage, tender rice and a fresh finish of spring onion give the dish richness without making it feel heavy.

Authenticity notes
- Creole-style base: Tomatoes are a defining feature of many Creole-style jambalayas, giving the rice a deeper colour and gentle acidity.
- Andouille character: Andouille brings the smoky, seasoned flavour associated with Louisiana cooking; choose a well-smoked sausage for the most recognisable result.
- Built from the pot: Cooking the rice in the same pot as the browned sausage and vegetables helps the grains absorb the full savoury base.
Timing notes
- Prep before you start: Dice the vegetables and slice the sausage before heating the pot, as the early stages move quickly once the sausage has browned.
- Let the rice steam: The covered rest after cooking allows the rice to finish absorbing moisture and settle into a better texture.
- Best served hot: Serve soon after the resting time, while the rice is tender and the sausage flavour is still vivid.
Common mistakes
- Boiling too hard: Keep the covered simmer low and steady; vigorous boiling can make the base catch before the rice has cooked through.
- Rushing the rice: If the grains are still firm, keep the pot covered a little longer rather than stirring aggressively.
- Adding liquid at the end: If the jambalaya looks tight before serving, loosen it with a small splash of hot stock and fold gently to avoid breaking the rice.
Make-ahead tips
- Good for leftovers: Cool quickly, then refrigerate in a sealed container and reheat only what you need.
- Reheat gently: Warm with a splash of water or stock over low heat, stirring occasionally, until piping hot throughout.
- Freezer-friendly: Freeze after cooking once fully cooled, then defrost overnight in the fridge before reheating.

Ingredients
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Slice the andouille sausage into rounds, then brown for 4 to 6 minutes, stirring, until well coloured. Lift the sausage out onto a plate, leaving the fat in the pot.
- Dice the yellow onion, celery and green pepper. Add them to the pot with a pinch of the fine sea salt and cook over medium heat for 6 to 8 minutes, stirring, until softened and starting to turn golden. Stir in the smoked paprika and dried thyme for 30 seconds until fragrant.
- Add the long-grain white rice and stir for 1 minute to coat the grains. Tip in the canned chopped tomatoes and pour in the chicken stock, then return the sausage to the pot. Bring to a gentle simmer, scraping the base to release any browned bits.
- Cover and simmer on low for 18 to 22 minutes, until the rice is tender and most of the liquid is absorbed. Turn off the heat and leave covered for 5 minutes to finish steaming. Taste and season with the remaining fine sea salt and the black pepper.
- Thinly slice the spring onion and fold most of it through the jambalaya. Spoon into bowls and scatter over the remaining spring onion to serve. If the rice looks a little tight, loosen it with a small splash of hot chicken stock from the measured amount before serving.
Recipe notes
Tips
- Keep the simmer very gentle once the pot is covered; a hard boil can catch the rice on the base before it cooks through.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the jambalaya is piping hot throughout before serving.
Substitutions
- Replace Chicken stock with Vegetable stock for a lighter, meat-free base flavour.
- Replace Smoked paprika with Sweet paprika for a less smoky finish.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container for up to 3 days. Reheat with a splash of water or chicken stock in a saucepan over low heat, stirring, until piping hot; freeze for up to 2 months and defrost overnight in the fridge before reheating.
