Vegan Jackfruit Tacos al Pastor
Why this recipe works
- Layered al pastor flavour: Pineapple, vinegar, guajillo chilli, annatto, cumin and oregano create a sweet, tangy and savoury sauce with gentle warmth.
- Better jackfruit texture: Pan-frying the shredded jackfruit before adding the sauce helps drive off excess moisture, so the filling catches at the edges rather than tasting wet.
- Good for planning ahead: The jackfruit filling stores and freezes well, while the tortillas and fresh toppings can be prepared just before serving.

Authenticity notes
- A vegan adaptation: Traditional al pastor is usually pork-based; this version keeps the pineapple-chilli flavour profile but uses young green jackfruit for a plant-based filling.
- Key flavour markers: Guajillo chilli, annatto, oregano, vinegar and pineapple give the sauce its recognisable colour, tang and fruit-forward warmth.
Ingredient notes
- Use young green jackfruit: Choose jackfruit packed in brine, not ripe jackfruit in syrup, which would be too sweet and soft for a savoury taco filling.
- About the chilli: Guajillo chilli powder brings mild heat and fruity depth; a mild chilli powder will work, but the flavour will be less distinctive.
Texture tips
- Dry the jackfruit well: Patting the jackfruit dry before frying helps it brown and prevents the filling from turning watery once the sauce is added.
- Let the edges catch slightly: Cook until the sauce clings tightly and the jackfruit looks lightly caramelised; this gives the filling a more satisfying taco texture.
Make-ahead tips
- Cook the filling ahead: The jackfruit filling can be made in advance and kept chilled, then reheated before assembling the tacos.
- Freeze the filling only: Freeze the cooked jackfruit separately from the tortillas and fresh toppings, then defrost in the fridge before reheating.
- Reheat gently in a pan: Warm the filling in a frying pan with a splash of water until piping hot, then serve with freshly warmed tortillas.

Ingredients
Instructions
- Pat the jackfruit dry, then pull it into shreds with your fingers, discarding any tough core pieces. Cut the pineapple into small chunks. Peel the garlic.
- In a blender, combine the pineapple, garlic, white wine vinegar, guajillo chili powder, ground annatto, ground cumin, dried oregano and fine sea salt. Blend until smooth, scraping down as needed.
- Heat 1 tbsp olive oil in a large frying pan over a medium-high heat. Add the shredded jackfruit and cook for 6 to 8 minutes, stirring occasionally, until it starts to dry out and take on a little colour.
- Pour in the blended al pastor-style sauce and reduce the heat to medium. Cook for 8 to 10 minutes, stirring, until the sauce clings to the jackfruit and the edges look lightly caramelised.
- Finely dice the white onion and roughly chop the fresh coriander. Cut the lime into wedges. Taste the jackfruit and add a pinch more fine sea salt if needed.
- Warm the corn tortillas in a dry pan over a medium heat for about 20 to 30 seconds per side, or until pliable. Fill with the jackfruit, then top with the onion and coriander. Serve with lime wedges for squeezing over.

Tips
- For the best texture, dry the jackfruit well before frying so it browns rather than steams.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, use extra care with hygiene and ensure the jackfruit is cooked until piping hot throughout.
Substitutions
- Replace White wine vinegar with Apple cider vinegar for a slightly fruitier tang.
- Replace Guajillo chili powder with Mild chili powder for a gentler heat and less fruity chilli flavour.
- Replace Pineapple with Mango for a sweeter, softer al pastor-style sauce.
Storage
- Refrigerate up to 3 days
- Store the cooked jackfruit filling in an airtight container in the fridge. Reheat in a frying pan with a splash of water until piping hot; warm the corn tortillas fresh. Freeze the filling only, then defrost overnight in the fridge before reheating.
