Croquettes de Crevettes Grises (Belgian Grey Shrimp Croquettes)
Why this recipe works
- Crisp outside, creamy centre: A firm chilled béchamel holds its shape during frying, creating a crunchy crumb shell around a soft seafood filling.
- Gentle, savoury depth: White pepper and nutmeg season the béchamel without overpowering the delicate flavour of the grey shrimp.
- Classic croquette method: Cooling, shaping, breading and chilling the mixture before frying helps the croquettes stay intact and cook evenly.

Authenticity notes
- Belgian coastal character: Grey shrimp croquettes are strongly associated with Belgian seafood cooking, where the small shrimps are valued for their sweet, briny flavour.
- Serve with lemon and parsley: A sharp squeeze of lemon and fresh herbs cut through the richness of the béchamel and fried crumb.
Timing notes
- Chill until firm: The filling needs to be cold and set before shaping; a loose or warm béchamel is much harder to coat cleanly.
- Serve straight after frying: Croquettes are at their best while the coating is crisp and the centre is hot and creamy.
Common mistakes
- Leaving the béchamel too loose: Cook it until very thick and pulling away from the sides of the pan; a runny base can split during frying.
- Frying too many at once: Crowding drops the oil temperature and can make the coating greasy rather than crisp.
- Letting the oil drift: Keep the oil close to 180°C (355°F) so the crumb browns quickly while the filling heats through.
Make-ahead tips
- Shape before guests arrive: The croquettes can be breaded and chilled ahead, then fried just before serving.
- Freeze unfried croquettes: Freeze the crumbed croquettes on a tray until solid, then pack airtight and fry from frozen when needed.
- Fry from frozen gently: Use 170°C (340°F) when frying from frozen so the centre becomes piping hot before the coating over-browns.

Instructions
- Warm the milk in a saucepan over low heat until steaming but not boiling. Set it aside off the heat.
- Melt the butter in a saucepan over medium heat. Add the flour and cook, stirring constantly, for 2 minutes until it smells biscuity but has not coloured.
- Whisk in the warm milk a little at a time until smooth, then cook for 6 to 8 minutes, whisking, until very thick and pulling away from the sides. Season with the salt, white pepper and nutmeg.
- Take the pan off the heat and fold in the grey shrimp. Scrape the mixture onto a tray and spread it out to cool quickly, then chill until firm enough to shape.
- Set up a breading station: flour in one bowl, eggs beaten in a second, and breadcrumbs in a third. With lightly floured hands, shape the chilled mixture into 12 croquettes.
- Coat each croquette in flour, then egg, then breadcrumbs, pressing gently so the crumbs adhere. Chill the crumbed croquettes for 20 minutes to help them hold their shape in the fryer.
- Heat the sunflower oil in a deep pot to 180°C (355°F). Fry the croquettes in batches for 3 to 4 minutes until deep golden, keeping the oil close to temperature.
- Drain briefly, then serve hot with lemon wedges and chopped parsley. Season lightly with a pinch more salt if needed.
Recipe notes
Tips
- Cook the béchamel until it is very thick; if it is loose, the croquettes are more likely to split during frying.
- Keep the oil at 180°C (355°F) and avoid overcrowding, so the croquettes fry quickly and stay crisp rather than greasy.
- If serving anyone vulnerable (young children, older adults, pregnant people, or those who are immunocompromised), make sure the croquettes are fried until piping hot throughout.
Substitutions
- Replace Fresh parsley with Fresh chives for a milder, oniony finish.
- Replace Breadcrumbs with Panko breadcrumbs for a lighter, crunchier coating.
Storage
- Refrigerate up to 2 days
- Cool completely, then refrigerate in a sealed container for up to 2 days. Freeze crumbed, unfried croquettes on a tray until solid, then pack airtight and freeze for up to 2 months; fry from frozen at 170°C (340°F) until golden and piping hot, allowing an extra 2 to 3 minutes.
