Galaktoboureko (Custard Phyllo Pastry)
Why this recipe works
- Distinct texture contrast: Crisp buttered phyllo surrounds a soft semolina custard, giving each slice both flake and creaminess.
- Classic syrup method: Pouring cooled syrup over the hot pastry helps it absorb evenly without collapsing the custard.
- Clean citrus balance: Lemon in the syrup cuts through the sweetness and richness, keeping the dessert fragrant rather than heavy.

Timing notes
- Let the syrup cool fully: Make the syrup first so it is cold before the pastry comes out of the oven; this helps the phyllo absorb it cleanly.
- Serve once fully set: Allow the pastry to cool completely in the dish before cutting through the base, otherwise the custard may slump.
- Best at room temperature: Chilled leftovers slice well, but the texture is best after standing until no longer fridge-cold.
Texture tips
- Keep the top crisp: Pour the syrup slowly over the scored cuts rather than flooding one area, so it soaks through without weighing down the top layers.
- For cleaner slices: Wait until the custard has cooled and set before portioning all the way through the pastry.
- Keep the custard smooth: Whisk constantly as the semolina thickens, then temper the eggs gradually to avoid a grainy or scrambled texture.
Common mistakes
- Adding eggs too quickly: Whisk a little hot custard into the eggs first before returning them to the pan; direct heat can curdle them.
- Using hot syrup: Hot syrup poured over hot pastry can soften the phyllo too much, so let the syrup cool before baking finishes.
- Leaving phyllo uncovered: Phyllo dries quickly once exposed, so keep the unused sheets covered while assembling the layers.
Authenticity notes
- Greek syruped pastry: Galaktoboureko belongs to the Greek family of syrup-soaked phyllo desserts, with custard as its defining filling.
- Semolina custard: Fine semolina gives the filling its characteristic body, helping it set into clean slices rather than a loose cream.
- Citrus variations: Lemon is classic in the syrup, while orange gives a softer, warmer citrus note.

Instructions
- Make the syrup first so it can cool: put 300 g caster sugar and the water in a saucepan. Use a vegetable peeler to remove wide strips of lemon peel, then squeeze in 2 tbsp lemon juice and add the peel. Bring to the boil, then simmer for 8 minutes until slightly thickened; set aside to cool completely.
- Heat the oven to 180°C (355°F). Melt the unsalted butter in a saucepan over low heat, then keep it warm. Lightly brush a baking dish with a little of the melted butter.
- For the custard, warm the whole milk in a saucepan over medium heat until steaming but not boiling. Whisk in the fine semolina, 150 g caster sugar and the fine sea salt, then cook for 6 to 8 minutes, whisking constantly, until very thick and bubbling. Take off the heat and whisk in the vanilla extract.
- In a mixing bowl, whisk the eggs. Whisk a ladle of the hot custard into the eggs to temper them, then whisk the egg mixture back into the pan. Return to low heat for 1 to 2 minutes, whisking, until the custard is glossy and thick; take off the heat.
- Lay the phyllo on the work surface and cover it with a clean, slightly damp tea towel while you work. Layer about half the sheets in the dish, brushing each sheet lightly with melted butter and letting the edges overhang the sides. Keep the layers neat so the base bakes evenly.
- Pour in the hot custard and level the top. Fold the overhanging phyllo over the custard, brushing with butter as you go. Top with the remaining sheets, buttering each one, then tuck the edges down around the sides to seal.
- Brush the top generously with the remaining butter. Using a sharp knife, score the top into 8 portions, cutting through the top layers but not all the way to the base. Bake for 45 to 55 minutes until deeply golden and crisp.
- Remove the galaktoboureko from the oven and immediately strain out and discard the lemon peel from the cooled syrup. Slowly pour the cold syrup evenly over the hot pastry, focusing on the cuts so it soaks in. Leave to cool completely in the dish so the layers set cleanly.
- Once fully cool, cut through the scored lines to portion. Serve at room temperature for the cleanest layers and crispest top.
Recipe notes
Tips
- Keep the phyllo covered with a slightly damp tea towel while assembling so it does not dry out and crack.
- Pour cold syrup over hot pastry for the best texture: the custard stays set while the top remains crisp.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs that are safe for raw or lightly cooked preparations and ensure the custard is cooked until thick and bubbling.
Substitutions
- Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
- Replace Lemon with orange for a softer citrus note in the syrup.
Storage
- Refrigerate up to 3 days
- Store covered in the fridge for up to 3 days. For the crispest top, bring to room temperature before serving; avoid microwaving as it softens the phyllo.
