Thai Red Curry Bowl with Chicken and Jasmine Rice
Why this recipe works
- Layered curry base: Toasting the red curry paste with garlic and ginger before adding coconut milk helps deepen the aromatic flavour.
- Creamy, spoonable sauce: Coconut milk gives the curry body and richness, coating the chicken and vegetables without needing a long simmer.
- Balanced finish: Fish sauce, palm sugar and lime bring salt, sweetness and acidity into balance, keeping the curry bright rather than heavy.

Adjust the heat
- For a milder curry: Use a little less red curry paste and add extra coconut milk or water if the sauce needs softening.
- For more heat: Increase the curry paste slightly or finish with sliced fresh chilli at the table.
- Keep the heat rounded: Lime juice and basil help lift the chilli warmth, so adjust them at the end rather than only adding more sweetness.
Ingredient notes
- Choose a good curry paste: Red curry paste varies widely in salt, chilli and aromatics, so taste the sauce before adding extra fish sauce.
- Chicken thigh stays tender: Boneless, skinless thigh is well suited to simmering because it remains juicy as the aubergine softens.
- Use fresh basil at the end: Adding basil off the heat preserves its fragrance and prevents the leaves from turning dull.
Common mistakes
- Boiling the coconut milk hard: Keep the curry at a gentle simmer once the coconut milk is added; aggressive heat can make the sauce split.
- Overcooking the chicken: Cut the chicken into even bite-size pieces and simmer only until cooked through so it stays tender.
- Letting the sauce reduce too far: If the curry becomes too thick before the vegetables are tender, loosen it gradually with a splash of hot water.
Make-ahead tips
- Pack components separately: For lunches, store the curry and rice in separate containers so the rice keeps its texture.
- Freeze the curry without garnish: The curry freezes well without the fresh basil; add basil and lime after reheating for a fresher finish.
- Reheat gently: Warm the curry over low heat until piping hot, adding a splash of water if the coconut sauce has thickened.

Instructions
- Rinse the jasmine rice until the water runs mostly clear. Tip into a saucepan with the water and fine sea salt, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes.
- Meanwhile, cut the chicken into bite-size pieces, cut the aubergine into 2 cm chunks, and slice the red pepper. Finely chop the garlic and grate the ginger. Pick the basil leaves and cut the lime into wedges.
- Heat the olive oil in a large frying pan over medium heat. Add the garlic and ginger and cook for 30 seconds until fragrant, then stir in the red curry paste and cook for 1 minute to toast it slightly. Pour in the coconut milk and bring to a gentle simmer.
- Add the chicken, aubergine and red pepper, stirring to coat. Simmer gently for 10 to 12 minutes, stirring occasionally, until the chicken is cooked through and the aubergine is tender. If the sauce thickens too much, add a splash of water from the kettle and return to a simmer.
- Stir in the fish sauce and palm sugar, then squeeze in a little lime juice to taste. Take off the heat and fold through most of the basil. Divide the rice between bowls, ladle over the curry, and finish with the remaining basil and lime wedges.
Recipe notes
Tips
- Keep the curry at a gentle simmer once the coconut milk is added; a hard boil can cause it to split.
- For the best texture, cut the chicken into even pieces so it cooks at the same rate as the vegetables.
- If serving anyone who is pregnant, elderly, or immunocompromised, ensure the chicken is cooked until piping hot throughout with no pink remaining.
Substitutions
- Replace Fish sauce with Soy sauce for a similar salty depth (the flavour will be less traditional).
- Replace Palm sugar with Light brown sugar for a similar sweetness.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in airtight containers. Reheat the curry in a saucepan over low heat until piping hot, adding a splash of water to loosen; reheat the rice separately with a tablespoon of water, covered, until steaming hot. Freeze the curry (without basil garnish) for up to 2 months; defrost overnight in the fridge before reheating.
