Korean Chicken Rice Bowl
Why this recipe works
- Glossy, savoury glaze: Gochujang, soy sauce, vinegar and brown sugar create a quick sauce with heat, saltiness, acidity and gentle sweetness.
- Fresh crunch: Raw cucumber, carrot and spring onion keep the bowl lively against the warm rice, glazed chicken and soft egg.
- Fast weeknight method: Chicken thighs cook quickly in bite-size pieces, and the sauce thickens in the pan rather than needing a long simmer.

Adjust the heat
- For a milder bowl: Use less gochujang and lean on the soy sauce, vinegar and sugar for balance, keeping the glaze savoury rather than fiery.
- For extra heat: Increase the gochujang or add a pinch of Korean chilli flakes if you have them, then taste before serving.
- Keep the heat rounded: The rice, egg, cucumber and sesame oil all soften the chilli, so serve the bowl fully assembled rather than as chicken alone.
Ingredient notes
- Gochujang: This fermented Korean chilli paste brings heat, sweetness and deep savoury flavour; brands vary, so adjust the final seasoning to taste.
- Chicken thighs stay juicy: Boneless thighs are well suited to quick pan cooking because they remain tender as the glaze reduces around them.
- Cut vegetables finely: Thin cucumber and carrot pieces make the bowl easier to mix and give a cleaner crunch in each bite.
Make-ahead tips
- Store for better texture: Keep the rice and chicken separate from the raw vegetables so the cucumber and carrot stay crisp.
- Reheat the warm elements only: Microwave the rice and chicken until piping hot, then add fresh vegetables, spring onion and a newly fried egg.
- Best assembled fresh: The finished bowl is at its best straight away, while the egg is warm and the vegetables still have crunch.
Authenticity notes
- Weeknight rice-bowl style: Rather than a traditional bibimbap with several seasoned vegetable components, this version uses raw vegetables and quickly glazed chicken for a simpler everyday approach.

Instructions
- Cook the short-grain rice in a saucepan according to the packet until tender, then cover and keep warm. While it cooks, finely grate the garlic.
- In a bowl, whisk together the gochujang, soy sauce, rice vinegar and light brown sugar until smooth. Slice the chicken thighs into bite-size pieces.
- Heat a large frying pan over medium-high heat and cook the chicken for 6 to 8 minutes, stirring, until browned and cooked through. Pour in the gochujang mixture and cook for 1 to 2 minutes, turning the chicken until the sauce is thick, glossy and clings to the meat.
- Cut the cucumber into thin half-moons and the carrot into fine matchsticks, then thinly slice the spring onion. Keep the vegetables raw for crunch.
- In the same pan over medium heat, fry the eggs for 2 to 3 minutes until the whites are set and the yolks are still runny, or cook to your liking. Divide the rice between two bowls, top with the chicken, cucumber and carrot, then add an egg to each bowl.
- Drizzle each bowl with toasted sesame oil and sprinkle with sesame seeds and spring onion. Serve straight away.
Recipe notes
Tips
- For a neater bowl, keep the chicken in a single layer when browning so it sears before the sauce goes in.
- If you are serving anyone vulnerable to food poisoning, cook the eggs until both the whites and yolks are fully set.
Substitutions
- Replace rice vinegar with white wine vinegar for a slightly fruitier acidity.
- Replace chicken thighs with chicken breast for a leaner bowl; reduce the final glazing time slightly to avoid drying out.
Storage
- Refrigerate up to 2 days
- Refrigerate leftover rice and chicken in sealed containers, and store the raw vegetables separately for best crunch. Reheat the rice and chicken in a microwave until piping hot, then add fresh cucumber, carrot and spring onion; fry fresh eggs to serve.
