Modern Bibimbap Bowl

In bibimbap, warm rice becomes the base for neatly arranged vegetables, savoury chilli sauce and a runny or firmly cooked egg, all mixed together just before eating. This modern Korean-style bowl keeps the format practical for everyday cooking: short-grain rice, quick-sautéed spinach, bean sprouts and carrot, crisp cucumber, kimchi and roasted sesame seeds. The gochujang, soy, rice vinegar and sesame dressing brings gentle heat, tang and nuttiness, while the separate toppings keep the bowl colourful and textural until the final stir.

Why this recipe works

  • Contrasting textures: Tender rice, crisp-edged egg, crunchy kimchi and just-cooked vegetables keep each bite varied.
  • Layered savoury flavour: Gochujang, soy sauce, sesame oil and kimchi bring heat, umami, acidity and nuttiness without needing a long cook.
  • Easy to adapt: The vegetable toppings can be adjusted while keeping the same rice, egg and dressing structure.

Adjust the heat

  • For a milder bowl: Use less gochujang in the dressing and let the sesame oil, soy sauce and rice vinegar carry more of the flavour.
  • For extra heat: Serve a little extra gochujang dressing on the side so each bowl can be adjusted after mixing.
  • Keep the heat balanced: Kimchi and gochujang both add intensity, so taste before adding extra salty seasoning.

Authenticity notes

  • Modern bowl style: This version keeps the recognisable bibimbap format of rice, vegetables, egg and gochujang, with a streamlined home-cooking method.
  • Mixed at the table: Bibimbap is typically arranged neatly, then mixed just before eating so the sauce coats the rice and toppings.
  • Gochujang matters: Gochujang gives the dressing its distinctive fermented chilli depth, gentle sweetness and savoury heat.

Make-ahead tips

  • Store components separately: Keep the rice and cooked vegetables in separate airtight containers so the toppings stay fresher and the rice reheats properly.
  • Reheat the rice well: Reheat the rice until piping hot, then assemble with fresh cucumber, kimchi and a newly fried egg for the best texture.
  • Prep vegetables ahead: Carrot and cucumber can be sliced in advance, making final assembly quicker once the rice and egg are ready.

Common mistakes

  • Overcooking the vegetables: Cook the carrot, sprouts and spinach briefly so they stay bright and distinct rather than soft and watery.
  • Leaving spinach too wet: Press the cooked spinach gently in a sieve-strainer; excess moisture can make the rice and toppings feel damp.
  • Skipping the rice rest: Let the covered rice steam off the heat as instructed so the grains finish cooking evenly before serving.

  1. Rinse the rice in cold water until the water runs mostly clear. Tip into a saucepan with the water, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes to finish steaming.
  2. Meanwhile, whisk the gochujang, soy sauce, rice vinegar and 1 tbsp of the toasted sesame oil in a mixing bowl until smooth. Taste and set aside so it is ready to stir through at the table. If it seems very thick, loosen with 1 tsp water from the tap.
  3. Cut the carrot into fine matchsticks and slice the cucumber into thin half-moons. Heat a large frying pan over medium-high heat with 1 tsp of the toasted sesame oil, then sauté the carrot for 2 to 3 minutes until just tender but still bright. Transfer to a plate, then quickly sauté the bean sprouts for 1 to 2 minutes until hot and slightly softened; transfer to the plate.
  4. Add another 1 tsp toasted sesame oil to the pan and cook the spinach for 1 to 2 minutes, turning, until just wilted. Tip into a sieve-strainer and press gently to remove excess moisture. Wipe the pan if needed.
  5. Return the pan to medium heat with the remaining toasted sesame oil. Fry the eggs for 2 to 3 minutes until the whites are set and the edges are crisp, or cook a little longer if you prefer the yolks set. Seasoning is optional as the dressing and kimchi are already salty.
  6. Divide the warm rice between two bowls and arrange the carrot, cucumber, spinach and bean sprouts on top in neat piles. Add the fried egg to each bowl, then spoon over some kimchi. Finish with roasted sesame seeds and serve with the gochujang dressing to stir through at the table.

Recipe notes

Tips

  • For the cleanest bowl, keep the vegetables in separate piles and only stir everything together just before eating.
  • If you like a softer cucumber, toss it with a little rice vinegar and leave it for 5 minutes while you cook the eggs, then drain before adding to the bowls.
  • Eggs should be cooked until the whites are fully set; if serving to pregnant people, young children, older adults, or anyone immunocompromised, cook the yolks until firm.

Substitutions

  • Replace rice vinegar with white wine vinegar for a slightly sharper tang.
  • Replace spinach with kale, cooked until just tender.
  • Replace cucumber with radish for extra crunch.

Storage

  • Refrigerate up to 2 days
  • Store rice and cooked vegetables in separate airtight containers in the fridge. Reheat the rice in a microwave until piping hot, then assemble with fresh cucumber, kimchi and a freshly fried egg for best texture.
