Chicken Saag (Spinach Chicken Curry)

In chicken saag, tender pieces of chicken are cooked in a savoury spinach-based curry that is smooth, gently spiced and rounded with dairy. This North Indian-style dish is recognisable for its deep green sauce, where wilted spinach is blended with softened onion, garlic, ginger, chilli, turmeric, cumin, coriander and garam masala. Boneless chicken thighs suit the simmer well, staying juicy as they absorb the spiced greens. A little whole milk yoghurt stirred in off the heat gives the curry body and a mild tang without making it heavy. Serve it hot with steamed rice, or pair it with flatbreads for a more scoopable meal.

Why this recipe works

  • Layered spice base: Cooking the onion slowly, then blooming the ground spices in ghee, gives the sauce a deeper savoury foundation before the spinach goes in.
  • Smooth, creamy sauce: Blending the wilted spinach with the aromatics creates a cohesive green curry base, while whole milk yoghurt adds body and tang.
  • Tender, saucy finish: Chicken thighs stay juicy as they simmer, making the curry hearty enough for rice while still keeping the sauce central.

Adjust the heat

  • For a milder curry: Remove the seeds from the green chilli, or use less of it, while keeping the ginger, garlic and spices for flavour.
  • For more heat: Use a hotter green chilli or add extra chilli to the onion base so the heat cooks into the sauce rather than sitting on top.
  • Keep the finish balanced: The yoghurt softens the chilli and spice; add it off the heat and warm gently so the curry stays smooth.

Ingredient notes

  • Chicken thighs work best: Boneless, skinless thighs suit the simmering time and stay more forgiving than leaner cuts.
  • Use full-fat yoghurt: Whole milk yoghurt gives a rounder texture and is less likely to split than lower-fat versions when warmed gently.
  • Wilt the spinach in batches: Adding the spinach gradually keeps the pot manageable and helps the greens cook down evenly before blending.

Texture tips

  • For a smoother sauce: Blend while the curry is still hot, then simmer briefly to tighten the sauce to your preferred consistency.
  • Protect the yoghurt: Take the pan off the heat before stirring in the yoghurt, then return it to a very low heat without boiling.
  • For a thicker curry: After blending, simmer uncovered for a short time and stir regularly so the spinach sauce does not catch on the base of the pot.

Make-ahead tips

  • Good for meal prep: The curry keeps well in the fridge for up to 3 days and reheats gently on the hob.
  • Freezer-friendly: Cool completely, freeze in a sealed container, then defrost overnight in the fridge before reheating.
  • Reheat gently: Warm over low heat, stirring often, and add a splash of water if the sauce has thickened too much.

  1. Finely chop the onion and chilli. Peel and grate the ginger, then crush the garlic.
  2. Heat the ghee in a large pot over medium heat. Cook the onion with a pinch of salt for 8 to 10 minutes, stirring, until soft and lightly golden.
  3. Stir in the chilli, ginger and garlic and cook for 1 minute until fragrant. Add the cumin, coriander, turmeric and half the garam masala, and cook for 30 seconds to bloom the spices.
  4. Add the chicken thighs and turn to coat in the spiced onion mixture. Cook for 4 to 5 minutes, stirring, until the chicken is no longer pink on the outside.
  5. Add the spinach in batches, stirring until each batch wilts. Pour in 250 ml water and simmer gently for 8 minutes, until the chicken is tender and cooked through.
  6. Blend the curry until smooth using an immersion blender, or carefully transfer to a blender and blitz, then return to the pot. Simmer for 2 to 3 minutes to thicken slightly, stirring so it does not catch.
  7. Take the pot off the heat and stir in the whole milk yogurt until fully combined. Return to a very low heat for 1 to 2 minutes to warm through without boiling, then stir in the remaining garam masala and season to taste.
  8. Rest for 5 minutes so the sauce settles and thickens slightly. Serve hot.

Steamed rice

Tips

  • For the smoothest sauce, blend while the curry is still hot, then simmer briefly to reach your preferred thickness.
  • Keep the heat low after adding the whole milk yogurt; boiling can cause it to split.
  • If serving vulnerable groups, ensure the chicken is cooked through and the curry is piping hot before serving.

Substitutions

  • Replace ghee with butter for a similar richness.
  • Replace whole milk yogurt with greek-yogurt for a thicker, tangier finish.
  • Replace chicken thighs with chicken-breast for a leaner curry; reduce the simmering time slightly to keep it tender.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat, stirring often, until piping hot; add a splash of water if needed. Freeze for up to 2 months and defrost overnight in the fridge before reheating.
