Hummus with Spiced Lamb
Why this recipe works
- Cool and hot contrast: Smooth hummus and hot browned lamb create a satisfying contrast in both temperature and texture.
- Warm spice depth: Cumin, cinnamon and paprika season the lamb after browning, giving the meat a fragrant, savoury finish.
- Fast assembly: Canned chickpeas and minced lamb keep the cooking time short while still delivering a full, filling plate.

Ingredient notes
- Choose smooth tahini: A smooth, pourable tahini blends more easily into the hummus and helps give it a creamier texture.
- Use chickpea liquid gradually: Add the reserved chickpea liquid a little at a time so the hummus becomes loose and spoonable without turning thin.
- Finish with lemon: The reserved lemon juice brightens the lamb and balances the richness of the tahini and olive oil.
Common mistakes
- Let the lamb brown: If the mince releases liquid, keep cooking until the pan is dry and the lamb starts to colour before adding the spices.
- Do not scorch the spices: Add the spices after the lamb has browned and cook them only briefly, just until fragrant.
- Avoid thick, pasty hummus: Blend longer than you might expect and loosen gradually with chickpea liquid until the hummus is creamy enough to scoop.
Make-ahead tips
- Store separately: Keep the hummus and lamb in separate airtight containers so the hummus stays cool and the lamb can be reheated properly.
- Reheat the lamb well: Warm the lamb in a frying pan until piping hot throughout, then spoon it over the hummus just before serving.
- Assemble just before eating: Plate the hummus first, then add the hot lamb, lemon and herbs at the last moment for the best contrast.
Serving ideas
- Serve with warm bread: Warm pita is the natural choice for scooping, but soft flatbreads also work well.
- Add fresh herbs: Parsley keeps the finish clean and fresh; mint gives a brighter, more aromatic note.
- Finish with paprika: A final dusting of sweet or smoked paprika adds colour and a gentle savoury edge.

Instructions
- Drain the chickpeas, reserving 60 ml of their liquid. Juice the lemon and set aside 2 tsp of the juice for finishing, then roughly chop the parsley.
- In a food processor, blend the chickpeas, tahini, garlic, most of the lemon juice and 2 tbsp of the olive oil until smooth. Add a splash of the reserved chickpea liquid as needed and keep blending until creamy and spoonable.
- Spoon the hummus onto a serving plate and use the back of a spoon to make a shallow well in the centre. Set aside while you cook the lamb.
- Warm the pita bread in a dry frying pan over medium heat for 30 to 60 seconds per side, until soft and warmed through. Keep warm while you cook the lamb.
- Heat the remaining 1 tbsp olive oil in the frying pan over medium-high heat. Add the minced lamb and cook for 5 to 7 minutes, breaking it up, until browned and any liquid has evaporated.
- Stir in the ground cumin, ground cinnamon and sweet paprika, and cook for 30 to 60 seconds until fragrant. Spoon the hot lamb over the cool hummus, then finish with the reserved lemon juice and the parsley.
Recipe notes
Tips
- For extra-smooth hummus, blend for a full minute after it looks smooth, adding reserved chickpea liquid a little at a time until it loosens.
- If the lamb starts to steam rather than brown, increase the heat slightly and keep stirring until the pan is dry and the mince colours.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the lamb is cooked until piping hot throughout.
Substitutions
- Replace Fresh parsley with Fresh mint for a brighter, more aromatic finish.
- Replace Sweet paprika with Smoked paprika for a deeper, smokier topping.
- Replace Pita bread with Naan bread for a softer, richer bread alongside.
Storage
- Refrigerate up to 3 days
- Store hummus and lamb separately in airtight containers. Reheat the lamb in a frying pan over medium heat until piping hot, then assemble just before serving; the hummus is best served at cool room temperature.
