Spinach Avocado Smoothie Bowl
Why this recipe works
- Fast to make: Everything blends in minutes, with only the coconut needing a brief toast for extra texture.
- Naturally creamy: Avocado and ripe banana create a thick, smooth base without dairy.
- Fresh balance: Lime cuts through the richness of the avocado and keeps the bowl tasting light rather than heavy.

Texture tips
- For a thicker bowl: Use well-chilled soy milk and add only enough liquid to keep the blender moving.
- Blend the greens first: Blitzing the spinach with the soy milk before adding the fruit helps the base turn smooth and evenly green.
- Add toppings last: Scatter over the raspberries and toasted coconut just before serving so the coconut stays crisp.
Ingredient notes
- Use ripe banana and avocado: Ripe fruit gives the bowl its sweetness and creamy body; underripe avocado can taste grassy and blend less smoothly.
- Sweeten only if needed: Taste before adding maple syrup, as a ripe banana may provide enough natural sweetness.
- Fresh or frozen berries: Fresh raspberries keep the topping delicate, while frozen berries add extra chill but may release more juice as they thaw.
Timing notes
- Best served immediately: The bowl is at its thickest and brightest just after blending.
- Chill before blending: Cold soy milk and chilled banana help create a colder, firmer texture without needing ice.

Ingredients
Instructions
- Toast the coconut flakes in a dry frying pan over a medium heat for 2 to 3 minutes, stirring, until lightly golden. Tip onto a plate to cool.
- Put the spinach and unsweetened soy milk in a blender and blitz until smooth and bright green. Add the banana, avocado flesh, juice of the lime and the maple syrup (if using), then blend until very thick and creamy, scraping down the sides as needed.
- Spoon into a bowl and smooth the top. Finish with the raspberries and toasted coconut flakes, then serve straight away cold.
Recipe notes
Tips
- For a thicker bowl, chill the banana and unsweetened soy milk in the fridge before blending and use the minimum liquid needed to keep the blender moving.
- Taste before serving and add the maple syrup only if you want extra sweetness, as ripe banana often provides enough.
Substitutions
- Replace Raspberry with Mixed berries for a different fruity topping.
- Replace Maple syrup with Agave syrup for a similar sweetness with a lighter flavour.
Storage
- Refrigerate up to 1 days
- Best eaten straight after blending. If needed, cover and refrigerate for up to 1 day; stir well before eating as it may loosen and darken slightly.
