Papaya Lime Coconut Smoothie Bowl
Why this recipe works
- Ready quickly: Blending ripe fruit with coconut milk keeps the method fast, with only a brief toasting step for the topping.
- Lime balances the sweetness: Fresh lime juice cuts through the ripe papaya and banana, keeping the bowl bright rather than overly sweet.
- Creamy with crunch: The smooth fruit base contrasts with toasted coconut and chia seeds for a more satisfying spoonful.

Ingredient notes
- Use ripe papaya: Choose papaya that is fragrant and yielding; underripe fruit will taste flatter and blend less smoothly.
- Coconut milk texture: Well-shaken coconut milk gives a smooth blend, while chilled thicker coconut milk makes the bowl richer and more spoonable.
- Add lime gradually: Papaya sweetness varies, so blend with most of the lime first, then add more until the flavour tastes bright but balanced.
Texture tips
- For a thicker bowl: Chill the fruit and coconut milk before blending, and avoid adding extra liquid unless the blender needs help moving.
- Blend until completely smooth: Papaya can be fibrous, so let the blender run until the base looks glossy and evenly creamy.
- Keep toppings crisp: Add toasted coconut just before serving so it stays fragrant and crunchy.
Make-ahead tips
- Prep the fruit in advance: Papaya and banana can be cut ahead and chilled so the bowl blends cold and quickly in the morning.
- Store toppings separately: Keep toasted coconut and chia seeds separate from the blended base until serving to preserve texture.
- Best served fresh: The bowl is at its creamiest straight after blending; if refrigerated, stir well before serving.

Ingredients
Instructions
- Toast the coconut flakes in a dry frying pan over a medium heat for 2 to 4 minutes, stirring, until lightly golden and fragrant. Tip onto a plate to stop them cooking further.
- Cut the papaya flesh into chunks and peel the banana. Zest the lime, then squeeze the juice; set aside a pinch of zest for the top.
- Blend the papaya, banana, coconut milk, most of the lime juice and the maple syrup (if using) until very smooth and thick. Add the remaining lime juice gradually until the sweetness tastes balanced and the bowl is still spoonable.
- Divide between two bowls and top with the toasted coconut flakes, chia seeds and the reserved lime zest. Eat straight away while it is cold and creamy.
Recipe notes
Tips
- For the thickest texture, chill the coconut milk in the fridge first, then scoop off the thicker layer into the blender.
- Taste after blending and adjust with a little more lime juice if the fruit is very ripe.
Substitutions
- Replace Maple syrup with Honey for a non-vegan option and a rounder sweetness.
- Replace Coconut flakes with Chia seeds for a quicker topping with no toasting.
Storage
- Refrigerate up to 1 days
- Best eaten straight away. If storing, keep in an airtight container in the fridge and stir well before serving; add the coconut flakes at the last moment so they stay crisp.
