Baklava Tray with Filo Pastry, Spiced Nuts and Orange Blossom Syrup

Layered with paper-thin filo, chopped nuts and fragrant syrup, baklava is one of the most recognisable pastries of the Middle Eastern and eastern Mediterranean table. This tray version keeps the classic character: crisp, buttered pastry, a warmly spiced walnut and pistachio filling, and a glossy honey syrup scented with lemon, vanilla and orange blossom water. The syrup is poured over the pastry while it is hot, helping the layers absorb sweetness while staying distinct and flaky. Cut into diamonds, it works especially well as a make-ahead pastry for sharing, with a rich nutty centre and a delicate floral finish.

Why this recipe works

  • Crisp, layered pastry: Brushing each filo sheet with butter helps the layers separate and bake into a crisp, flaky structure.
  • Fragrant nut filling: Walnuts, pistachios, cinnamon and salt give the filling richness, warmth and contrast against the sweet syrup.
  • Syrup-soaked finish: Pouring warm syrup over the hot pastry helps it absorb evenly while preserving definition in the filo layers.

Timing notes

  • Let it settle before serving: Allow the baklava to cool completely after the initial soak so the syrup can distribute through the layers and the pieces hold their shape.
  • Good made ahead: Baklava often slices and serves neatly after several hours of resting, making it well suited to preparing in advance.

Texture tips

  • Keep the filo protected: Cover unused filo with a barely damp cloth while assembling; dry sheets crack easily and can create uneven layers.
  • Cut before baking: Scoring all the way through before baking allows the butter and syrup to reach the layers cleanly and gives sharper diamond shapes.

Ingredient notes

  • Use fresh nuts: Fresh walnuts and pistachios are important here, as stale nuts can make the filling taste flat or slightly bitter.
  • Keep some texture: Chop the nuts roughly rather than grinding them finely; a mix of small and larger pieces gives the filling a better bite.
  • Use floral waters sparingly: Orange blossom water and rose water vary in strength, so add with care if adjusting the syrup.

Make-ahead tips

  • Bake ahead: Bake and cool the baklava fully before storing; it keeps best at cool room temperature for the first few days.
  • Freeze after baking: Freeze well wrapped, then thaw at room temperature before serving.
  • Refresh before serving: To restore some crispness after freezing, warm briefly in a 160°C (320°F) oven.

  1. Heat the oven to 170°C (340°F). Melt the unsalted butter in a saucepan over low heat, then keep it warm.
  2. Roughly chop the walnuts and pistachios, aiming for a mix of small pieces and a few larger bits. Tip into a mixing bowl and stir in the caster sugar, ground cinnamon and fine sea salt.
  3. Brush a baking tray generously with melted butter. Lay in a sheet of phyllo dough, brush with butter, then repeat to build up about 10 layers, keeping the remaining phyllo covered with a barely damp cloth as you work.
  4. Scatter over about one third of the nut filling in an even layer. Add 5 more buttered layers of phyllo, then repeat the filling and layering twice more, finishing with about 10 buttered layers on top.
  5. Using a sharp knife, cut the baklava into diamond shapes, slicing all the way through to the base. Pour any remaining melted butter evenly over the top, letting it run into the cuts.
  6. Bake for 60 to 70 minutes until deeply golden and crisp, rotating the tray halfway through for even colouring. If it browns too quickly, lower the oven to 160°C (320°F) for the final 15 minutes.
  7. While the baklava bakes, make the syrup: combine the water, caster sugar and honey in a saucepan. Use a vegetable peeler to remove a few strips of lemon peel, then squeeze in the lemon juice and add the peel to the pan.
  8. Bring the syrup to a gentle simmer and cook for 8 to 10 minutes until slightly thickened. Take off the heat, stir in the orange blossom water and vanilla extract, then leave warm.
  9. As soon as the baklava comes out of the oven, slowly pour the warm syrup evenly over the hot pastry. Leave at room temperature for at least 30 minutes to soak, then cool completely before re-cutting along the lines to separate the diamonds cleanly.

Recipe notes

Tips

  • Keep the phyllo dough covered with a barely damp cloth while you assemble, so it does not dry out and crack.
  • For the cleanest diamonds, cut the tray before baking, then re-cut once cooled to fully separate the pieces.
  • If serving to young children, older adults, or anyone who is immunocompromised, use honey that is suitable for them and follow relevant food safety guidance.

Substitutions

  • Replace Orange Blossom Water with rose water for a more floral syrup.
  • Replace Walnuts with Pistachios (use the same total weight) for a greener, more delicate nut filling.
  • Replace Honey with caster sugar (use the same weight) for a cleaner, less aromatic sweetness.

Storage

  • Refrigerate up to 7 days
  • Store in an airtight container. Baklava keeps best at cool room temperature for 3 days for maximum crispness; refrigerate after that. Freeze well wrapped for up to 2 months, then thaw at room temperature and refresh in a 160°C (320°F) oven for 5 to 8 minutes.
