Alfajores (Sandwich Biscuits with Dulce de Leche)
Why this recipe works
- Soft biscuit, creamy centre: The tender, pale biscuits contrast with the thick dulce de leche filling and fine coconut edge.
- Pale baking style: Baking the biscuits only until set keeps them soft and crumbly rather than crisp or browned.
- Good for preparing ahead: The filled biscuits store well, and a short rest at room temperature brings back their best texture before serving.

Timing notes
- Chill before rolling: A brief chill firms the soft dough, making it easier to roll and helping the biscuits hold clean edges.
- Serve at room temperature: If refrigerated, let the alfajores sit out briefly before serving so the biscuit softens and the filling is creamy.
Texture tips
- Mix gently once the flour is added: Stop as soon as the dough comes together; overworking it can make the biscuits less delicate.
- Keep the biscuits pale: They should be set with barely any colour. Browning makes the texture firmer and less characteristic of alfajores.
Ingredient notes
- Cornflour is key: Cornflour gives alfajores their distinctive short, crumbly texture and keeps the biscuit lighter than an all-flour dough.
- Use thick dulce de leche: A firm, spoonable dulce de leche is easiest to pipe or spread and helps the sandwich biscuits hold neatly.
Authenticity notes
- Latin American classic: Alfajores are made in many Latin American countries, with dulce de leche-filled versions especially associated with Argentina and Uruguay.
- Coconut or powdered finish: Rolling the exposed filling in desiccated coconut is common, while a lighter powdered edge is another familiar style.

Instructions
- Heat the oven to 170°C (340°F). Line two baking trays with baking mats.
- Beat the butter and caster sugar until pale and fluffy. Finely zest the lemon, then beat in the zest, vanilla and egg yolks until smooth.
- Whisk together the plain flour, cornflour and baking powder, then add to the bowl. Mix on low just until a soft dough forms; it should be tender, not sticky.
- Bring the dough together into a disc, then chill it until firm enough to roll cleanly. This helps the biscuits keep their shape and stay delicate.
- Roll the dough to about 5 mm thick and cut out rounds about 5 cm wide, re-rolling scraps as needed. Arrange on the trays with a little space between each.
- Bake for 8 to 10 minutes, rotating the trays halfway through, until the biscuits are set and just pale with barely any colour. Cool on the trays for 5 minutes, then transfer to a rack to cool completely.
- Match the biscuits into pairs of similar size. Spread or pipe dulce de leche onto the flat side of one biscuit, sandwich with its partner, then roll the exposed filling edge in the desiccated coconut.
Recipe notes
Tips
- Keep the biscuits pale: if they start to colour at the edges, they are done and will firm up as they cool.
- If the dough cracks as you roll, let it sit at room temperature for 2 to 3 minutes, then roll again with gentle pressure.
- If serving to vulnerable groups, use pasteurised egg yolk.
Substitutions
- Replace Vanilla extract with the finely grated zest from the Lemon for a brighter, citrus-forward biscuit.
- Replace Desiccated coconut with a light dusting of Cornflour on the filling edge for a more traditional, powdery finish.
Storage
- Refrigerate up to 5 days
- Store in an airtight container. For the best texture, let chilled alfajores sit at room temperature for 15 minutes before serving; freeze in a single layer, then transfer to a container and defrost at room temperature.
