Cordero Asado a la Castellana (Castilian Roast Lamb)
Why this recipe works
- Aromatic seasoning: Garlic, rosemary and lemon zest are tucked into the lamb, flavouring the meat from within as it roasts.
- One-pan depth: The potatoes cook directly underneath the lamb, absorbing wine, herbs and roasting juices instead of needing a separate side dish.
- Classic roasting method: A hot initial roast encourages browning before gentler cooking helps the lamb become tender without drying out.

Timing notes
- Rest before carving: Let the lamb rest after roasting so the juices settle and the meat carves more cleanly.
- Serve while the potatoes are glossy: The potatoes are best served soon after roasting, while the pan juices are still hot and spoonable.
Texture tips
- For tender lamb: After the initial browning stage, keep the oven lower and baste during roasting so the surface stays moist while the meat softens.
- Watch the potatoes: If the potatoes are browning faster than the lamb is tenderising, reduce the oven to 160°C (320°F) and continue roasting gently.
Ingredient notes
- Bone-in lamb: A bone-in leg suits this style of roasting because it gives a generous centrepiece and helps keep the meat flavourful.
- Use a dry white wine: Choose a dry wine rather than a sweet one, as it reduces into a more savoury pan sauce.
- Fresh herbs work best: Fresh rosemary gives a clearer, more aromatic flavour during roasting; thyme can be used for a softer herbal note.
Authenticity notes
- Castilian style: This preparation reflects the straightforward Castilian approach to roast lamb: good meat, garlic, herbs, wine and potatoes cooked together.
- Serve from the pan: Carve the lamb and serve it with the potatoes and roasting juices for a simple, family-style main course.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Pour 1 tbsp of the olive oil into a roasting pan.
- Peel the potatoes and slice them into 1 cm rounds, then lay them in the pan. Season the potatoes with 1 tsp of the salt and 0.5 tsp of the pepper, and drizzle over another 1 tbsp of the olive oil.
- Pat the lamb dry and rub it all over with the remaining 1 tbsp olive oil, remaining 1 tsp salt, and remaining 0.5 tsp pepper. Peel the garlic and lightly crush the cloves; strip the rosemary leaves from 2 sprigs and finely chop them, then zest the lemon and mix the zest with the chopped rosemary and crushed garlic.
- Using the tip of a knife, make small slits all over the lamb and push the garlic, rosemary and lemon zest mixture into the slits. Sit the lamb on top of the potatoes and tuck the remaining rosemary sprig into the pan.
- Roast for 20 minutes to start browning. Carefully pour the white wine into the pan around the lamb, then return to the oven.
- Reduce the oven to 170°C (340°F) and roast for 60 minutes, basting the lamb and turning the potatoes once halfway through. The lamb should be tender and the potatoes golden with the pan juices bubbling around them.
- Transfer the lamb to a board and rest for 10 minutes. Squeeze a little lemon juice into the roasting pan, then spoon the roasting juices over the potatoes and carve the lamb to serve alongside.
Recipe notes
Tips
- If the potatoes are browning too quickly before the lamb is tender, lower the oven to 160°C (320°F) and continue roasting until the meat yields easily when pierced.
- For best flavour, baste the lamb with the pan juices every 20 minutes during the long roast.
Substitutions
- Replace Fresh rosemary with fresh thyme for a softer, more floral herb note.
- Replace Dry White Wine with dry sherry for a deeper, nuttier flavour.
Storage
- Refrigerate up to 3 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat lamb and potatoes in a 180°C (355°F) oven until piping hot; add a splash of water to the pan if the juices have reduced too much.
