Blackened Catfish with Lemon Butter

Blackened catfish brings together the bold, smoky spice crust associated with Southern American cooking and the mild, tender texture of white fish. The fillets are coated with paprika, garlic, thyme and cayenne, then seared hard in butter so the outside becomes deeply browned while the centre stays moist and flaky. A quick lemon butter made in the same pan cuts through the richness and lifts the heat of the seasoning. Served with steamed long-grain rice, it is a compact, satisfying dinner with plenty of flavour and very little fuss.

Why this recipe works

  • Bold seasoning: Smoked paprika, cayenne, thyme and garlic create a savoury crust with heat, smoke and herbal depth.
  • Fast cooking: Thin white fish fillets cook quickly in a very hot pan, making the dish suitable for a full dinner in around 30 minutes.
  • Sharp finish: Lemon juice cuts through the butter and spice, giving the pan sauce enough brightness to balance the richness.

Adjust the heat

  • For less heat: Reduce the cayenne and keep the smoked paprika, thyme and garlic unchanged so the fish still has a full blackened flavour.
  • For more heat: Increase the cayenne slightly or add a pinch of hot paprika to the rub, taking care not to overpower the lemon butter.
  • Keep it balanced: Serve with plain rice and plenty of lemon butter to soften the spice without dulling the crust.

Texture tips

  • Dry the fish well: Moisture on the surface prevents the spice rub from browning properly, so pat the fillets very dry before seasoning.
  • Watch the timing: White fish can move quickly from tender to dry; remove it as soon as it flakes easily and let it rest briefly before saucing.

Common mistakes

  • Starting with a lukewarm pan: The pan needs to be very hot before the butter and fish go in, otherwise the spices steam rather than form a dark crust.
  • Letting the butter scorch: Add the butter only when the pan is ready and reduce the heat before making the lemon butter sauce.
  • Reheating too aggressively: Warm leftovers gently over low heat so the fish does not toughen or dry out.

Ingredient notes

  • Choosing the fish: Catfish suits this style well, but another firm, skinless white fish fillet can also work if it holds together in the pan.
  • Paprika choice: Smoked paprika gives the rub its deeper, barbecue-like note; sweet paprika makes the dish milder and less smoky.
  • Using salted butter: If using salted butter, reduce the added salt in the seasoning so the pan sauce does not become too salty.

  1. Rinse the rice under cold water until the water runs mostly clear. Tip into a saucepan with 300 ml water and 0.5 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Remove from the heat and leave, covered, for 10 minutes to steam through.
  2. Meanwhile, pat the fish dry with kitchen paper. Mix the smoked paprika, ground garlic, dried thyme, cayenne pepper and the remaining 0.5 tsp fine sea salt, then coat the fish all over with the spice rub.
  3. Heat a large frying pan over high heat until very hot. Add 40 g of the unsalted butter and, once foaming, lay in the fish. Cook for 2 to 4 minutes per side until deeply browned and the fish flakes easily.
  4. Transfer the fish to plates to rest briefly. Lower the heat to medium and add the remaining 20 g butter to the pan. Squeeze in the lemon juice, swirl to emulsify, then spoon the lemon butter over the fish.
  5. Fluff the rice with a fork and serve alongside the blackened fish. Spoon over any remaining lemon butter from the pan.

Recipe notes

Tips

  • For the best blackened crust, make sure the fish is very dry before adding the spice rub and the pan is properly hot before the butter goes in.
  • If cooking for anyone sensitive to heat, reduce the cayenne pepper to 0.25 tsp and keep the rest of the seasoning the same.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the fish is cooked until piping hot throughout and flakes easily.

Substitutions

  • Replace the long-grain white rice with basmati rice for a more fragrant side; cook it using the same absorption method.
  • Replace smoked paprika with sweet paprika for a milder, less smoky flavour.
  • Replace unsalted butter with salted butter, then reduce the fine sea salt to 0.5 tsp total.

Storage

  • Refrigerate up to 2 days
  • Cool leftovers quickly, then refrigerate in a sealed container. Reheat the rice with a splash of water in a covered saucepan over low heat until piping hot, and warm the fish gently in a frying pan over low heat to avoid drying it out.
