Agnello al Forno (Roast Lamb with Potatoes and Rosemary)
Why this recipe works
- One-pan flavour: The lamb and potatoes roast together, so the potatoes absorb the rosemary, garlic, wine and meat juices as they cook.
- Golden potatoes: Keeping the potatoes in chunky pieces helps them brown at the edges while staying soft and fluffy inside.
- Bright finish: Lemon added at the end cuts through the richness of the lamb and lifts the savoury pan juices.
- Simple roast method: Most of the cooking happens in the oven, with only a turn of the potatoes and a short rest before carving.

Timing notes
- Rest before carving: Let the lamb rest for 10 minutes so the juices settle and the meat slices more cleanly.
- Serve soon after finishing: The potatoes are best while still hot and crisp-edged, especially once tossed with lemon and olive oil.
Texture tips
- For better potato edges: Cut the potatoes into generous chunks rather than small pieces so they can brown without drying out.
- Add wine carefully: Pour the wine into the corner of the pan rather than over the lamb to preserve the surface browning and avoid wetting the potatoes too much.
Ingredient notes
- Choose a roasting potato: Yukon Gold potatoes work well because they hold their shape while becoming creamy inside; baby red potatoes give a firmer, waxier result.
- Use fresh rosemary if possible: Fresh rosemary gives the roast a cleaner, more aromatic flavour than dried herbs, which can taste sharper in long oven cooking.
- Finish with lemon to taste: Add the lemon at the end rather than before roasting so its brightness stays fresh and distinct.
Make-ahead tips
- Prep ahead: The garlic, rosemary and potatoes can be prepared shortly before roasting, but keep the potatoes covered so they do not discolour.
- Reheat gently: Warm leftovers in a 180°C (355°F) oven until piping hot, then refresh with a little lemon after reheating.
- Freeze with pan juices: Freeze carved lamb and potatoes with some of the cooking juices to help protect the texture when reheated.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Pat the lamb dry, then season all over with the salt and pepper. Lightly crush the garlic cloves and strip the leaves from 2 rosemary sprigs.
- Cut the potatoes into chunky pieces and put them in a roasting pan. Add the crushed garlic, rosemary leaves, 3 tbsp of the olive oil, and a pinch more salt and pepper, then toss well. Nestle the lamb among the potatoes and add the remaining rosemary sprigs to the tray.
- Roast for 20 minutes to start browning the lamb and potatoes. Pour the wine into the corner of the pan (not over the lamb) and return to the oven. Roast for a further 55 to 65 minutes, turning the potatoes once, until the lamb is tender and the potatoes are deeply golden.
- Transfer the lamb to a board and rest for 10 minutes. Squeeze the lemon over the potatoes and pan juices, then drizzle with the remaining 2 tbsp olive oil and toss to coat. Carve the lamb and serve with the lemony potatoes and any juices spooned over.
Recipe notes
Tips
- For the best texture, keep the potatoes in large chunks so they crisp on the outside while staying fluffy within.
- If the tray looks dry at any point, add a small splash more Dry White Wine to keep the potatoes juicy without steaming them.
- If serving pregnant people, young children, or older adults, cook the lamb until well done and piping hot throughout.
Substitutions
- Replace Fresh rosemary with fresh thyme for a softer, more floral herb note.
- Replace Dry White Wine with water if you prefer to cook without alcohol; the flavour will be milder, so season carefully at the end.
- Replace Yukon Gold potato with baby red potatoes for a firmer, waxier texture.
Storage
- Refrigerate up to 3 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven until piping hot; add a squeeze of Lemon after reheating to refresh the flavour. Freeze carved lamb and potatoes with a little pan juice for best results.
