Arroz Caldoso (Spanish Brothy Rice)
Why this recipe works
- Deep sofrito base: Gently cooking onion, garlic and ripe tomato concentrates sweetness and savoury depth before the rice is added.
- Brothy rice texture: Adding hot saffron stock gradually keeps the rice moving towards a loose, spoonable finish rather than a dry paella-style set.
- Simple ingredients, clear flavour: Saffron, paprika, tomato and olive oil carry the dish without needing meat, seafood or heavy seasoning.

Texture tips
- Keep it brothy: The rice should settle softly in the bowl rather than hold its shape. Add extra hot stock near the end if it starts to tighten.
- Stop before it turns mushy: Cook until the grains are tender with a slight bite, then rest briefly off the heat so they finish without breaking down.
Timing notes
- Best served straight away: Arroz caldoso is at its best shortly after cooking, while the broth is still loose and the rice has not absorbed too much liquid.
- Short rest only: A brief rest helps the flavours settle, but leaving it too long will make the rice continue absorbing the broth.
Ingredient notes
- Use short-grain rice: Short-grain rice releases enough starch to give the broth body while still keeping a distinct grain when cooked carefully.
- Let saffron lead: Good saffron gives the stock its golden colour and floral aroma, so keep the heat gentle once it is infused.
- Choose ripe tomatoes: Very ripe tomatoes make a sweeter, glossier sofrito and reduce the need for extra seasoning.
Authenticity notes
- Different from paella: The defining feature is the loose, soupy consistency; it should not form a dry base or crust like paella.
- A flexible Spanish rice style: Arroz caldoso is often adapted with vegetables, seafood or meat, but the essential structure remains rice cooked in a flavourful broth.

Instructions
- Pour the vegetable stock into a large pot and bring it just to a gentle simmer. Crush the saffron threads between your fingers, stir them into the stock, and keep it hot over a low heat.
- Heat the olive oil in a wide pot over a medium heat. Add the onion with a pinch of the salt and cook, stirring often, for 8 to 10 minutes until softened and sweet but not browned.
- Stir in the garlic and cook for 1 minute until fragrant. Add the sweet paprika and stir for 10 seconds so it blooms in the oil without catching.
- Grate the tomatoes into the pot (discarding the skins if you like) and stir well. Simmer for 10 to 12 minutes, stirring now and then, until the sofrito is thick, glossy, and the oil begins to separate at the edges.
- Stir in the rice to coat it in the sofrito, then add about two-thirds of the hot saffron stock. Bring to a lively simmer and cook for 12 minutes, stirring occasionally to keep the rice moving and the texture loose.
- Add more hot stock a ladle at a time until the rice is tender with a slight bite and the dish is brothy and spoonable, not set like paella. Taste and add the remaining salt if needed, then rest off the heat for 2 to 3 minutes before serving.
Recipe notes
Tips
- Keep the stock hot while the rice cooks so the simmer stays steady and the grains cook evenly.
- For the classic caldoso texture, aim for a loose consistency that slowly settles in the bowl; add a final ladle of stock just before serving if it tightens up.
- If serving vulnerable groups, ensure the rice is fully tender and the dish is piping hot throughout before serving.
Substitutions
- Replace Yellow onion with Sweet onion for a slightly softer, sweeter sofrito.
- Replace Sweet paprika with Smoked paprika for a deeper, smoky flavour.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. The rice will continue to absorb liquid; reheat gently in a saucepan with a splash of Vegetable stock, stirring, until piping hot and brothy again.
