Arroz con Verduras a la Valenciana (Valencian Vegetable Rice)
Why this recipe works
- Built on a savoury sofrito: Grated tomato, garlic, olive oil and sweet paprika are cooked down before the rice is added, giving the stock a deeper, more rounded flavour.
- Paella-style cooking: Once the hot saffron stock goes in, the rice is levelled and left unstirred so the grains cook evenly and the base can toast.
- Tender rice, toasted base: The final gentle crackle signals a lightly nutty bottom layer, adding contrast to the soft rice and vegetables.
- Bright finish: A squeeze of lemon cuts through the olive oil and saffron-rich rice without overwhelming the vegetable flavours.

Ingredient notes
- Use paella rice: Short-grain paella rice is best because it absorbs the stock while keeping a defined grain structure.
- Let saffron infuse: Warming the saffron in hot stock helps draw out its colour and aroma before it reaches the rice.
- Treat paprika gently: Sweet paprika should be stirred in briefly so it blooms in the oil without scorching.
Timing notes
- Prepare before the rice goes in: Trim the vegetables, grate the tomato and keep the stock hot before adding the rice, as the final cooking stage moves quickly.
- Rest before serving: A short covered rest helps the rice finish absorbing steam and settle before it is served.
- Serve soon after resting: This style of rice is at its best shortly after cooking, when the grains are tender and the base is still lightly toasted.
Common mistakes
- Stirring after adding stock: Avoid stirring once the stock is added; stirring can make the rice release excess starch and prevent the toasted base forming.
- Adding cold stock: Cold stock slows the cooking and can lead to uneven rice. Keep it steaming hot before it goes into the pan.
- Pushing the socarrat too far: A gentle crackle and nutty aroma are good signs; remove the pan from the heat before the base smells burnt.
Serving ideas
- Finish with lemon: Serve with lemon wedges so each portion can be brightened to taste.
- Keep sides simple: A crisp green salad or marinated olives work well alongside the saffron rice without competing with it.
- Serve from the pan: Bringing the pan to the table keeps the rice in its traditional serving style and preserves the toasted base.

Ingredients
Instructions
- Warm the vegetable stock in a saucepan until steaming, then stir in the dried saffron threads and keep it on a very low heat. Grate the tomatoes on a grater into a bowl, discarding the skins, and finely grate or crush the garlic.
- Heat the extra virgin olive oil in a paella pan over a medium heat. Add the green beans and cook for 4 to 5 minutes until glossy and lightly coloured, then add the red pepper and cook for 3 minutes more.
- Trim the artichokes by removing tough outer leaves, then cut into bite-sized pieces. Add them to the pan and cook for 4 to 5 minutes, stirring so they take on a little colour.
- Stir in the garlic for 30 seconds, then add the grated tomato and cook for 4 to 5 minutes until reduced and jammy. Stir in the sweet paprika for 10 seconds so it blooms but does not burn.
- Add the paella rice and stir for 1 minute to coat the grains in the sofrito. Pour in the hot saffron stock and shake the pan gently to level the rice; from this point, avoid stirring so the base can toast.
- Simmer over a medium heat for 10 minutes, then reduce to medium-low and cook for a further 8 to 10 minutes until the rice is tender and most of the liquid has been absorbed. Listen for a gentle crackle at the end, which signals the base is lightly toasting; remove from the heat as soon as it smells nutty, not burnt.
- Cover the pan with a lid or a clean tea towel and rest for 5 minutes. Cut the lemon into wedges and squeeze a little over the rice to taste, then serve straight from the pan with the remaining wedges alongside.
Recipe notes
Tips
- Keep the stock hot when you add it so the rice starts cooking immediately and the grains stay separate.
- If the pan dries out before the rice is tender, add a small splash of hot vegetable stock and continue cooking until the grains are just done.
- If serving anyone who is pregnant, elderly, or immunocompromised, ensure the rice is cooked until fully tender and piping hot throughout.
Substitutions
- Replace sweet paprika with smoked paprika for a deeper, smoky flavour.
- Replace artichoke with red pepper for a simpler version with fewer vegetables.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in an airtight container. Reheat in a frying pan with a splash of water or vegetable stock over a medium-low heat until piping hot, or microwave covered, stirring once halfway through.
