Vegan Locro de Papa (Ecuadorian Potato Soup)

Locro de papa is Ecuador’s comforting potato soup, known for its soft, creamy body and simple but distinctive seasoning. Potatoes break down as they simmer, giving the soup natural thickness, while onion, garlic, cumin and achiote add warmth, colour and a savoury base. This vegan version keeps the familiar richness without dairy by blending cannellini beans into the broth, creating a smooth, satisfying texture. Fresh coriander and lime lift the finish, and sliced avocado on top makes each bowl feel complete, mellow and generous enough for an easy dinner.

Why this recipe works

  • Creamy without dairy: Tender potatoes soften into the broth while blended cannellini beans add a smooth, substantial body.
  • Aromatic base: Cooking the onion until lightly golden before adding garlic, cumin and annatto gives the mild soup a deeper savoury foundation.
  • Fresh finish: Lime and coriander lift the richness of the potatoes and beans, while avocado adds a soft, cooling contrast.

Authenticity notes

  • Vegan adaptation: Locro de papa is often enriched with dairy; this version uses blended white beans to create body while keeping the potato, cumin, annatto and avocado profile recognisable.
  • Serve with avocado: Sliced avocado is more than a garnish here: it adds the creamy, cooling finish that balances the warm, savoury soup.

Ingredient notes

  • Annatto brings colour, not heat: Ground annatto, also known as achiote, gives the soup its warm golden colour and gentle earthiness rather than chilli-style spice.
  • Choose creamy potatoes: Yukon Gold potatoes work well because they hold some shape while still softening enough to thicken the broth.
  • Use firm-ripe avocado: The avocado should be ripe enough to slice cleanly but firm enough to hold its shape when added to the hot soup.

Texture tips

  • Blend the beans well: A very smooth bean purée thickens the soup cleanly; any graininess will be more noticeable in a simple potato broth.
  • For a thicker soup: Simmer a little longer after adding the bean purée, stirring regularly so the potatoes do not catch on the base of the pot.
  • For a looser texture: Add extra vegetable stock gradually, especially when reheating, as potatoes and beans continue to thicken as they stand.

Make-ahead tips

  • Good for batch cooking: The soup keeps well in the fridge and can be frozen once cooled, making it suitable for easy make-ahead meals.
  • Reheat gently: Warm in a saucepan until piping hot, adding a splash of stock if needed to bring back a creamy, spoonable consistency.
  • Add fresh toppings last: Slice the avocado and add the coriander and lime just before serving so the finish stays bright and fresh.

  1. Finely chop the white onion and crush the garlic. Peel the potatoes and cut them into small chunks so they cook evenly.
  2. In a large pot over medium heat, cook the onion with a splash of vegetable stock until softened and starting to turn golden at the edges, 6 to 8 minutes. Stir in the garlic, ground cumin and ground annatto, and cook for 30 seconds until fragrant.
  3. Add the potatoes and the remaining vegetable stock, bring to a simmer, then cook for 15 to 20 minutes until the potatoes are very tender. Stir occasionally so nothing catches on the base.
  4. Blend the cannellini beans until smooth, using a ladle of the hot soup to help it blend, then stir the bean purée into the pot. Simmer for 3 to 5 minutes until the soup looks creamy and slightly thickened; for an even silkier texture, briefly blend the pot with an immersion blender.
  5. Take the pot off the heat and stir in most of the fresh coriander. Squeeze in lime to taste.
  6. Slice the avocado. Ladle the soup into bowls and top with the avocado and the remaining fresh coriander; serve hot with extra lime if you like.

Recipe notes

Tips

  • Cooking the onion until lightly golden deepens the flavour before you add the spices.
  • Blend the cannellini beans very smooth so they thicken the soup without tasting floury.
  • Add the fresh coriander off the heat to keep it bright and fragrant.

Substitutions

  • Replace cannellini beans with canned white beans for the same creamy thickening effect.
  • Replace lime with lemon if that is what you have; it will still give a fresh finish.
  • Replace fresh coriander with a smaller amount of fresh parsley if you prefer a milder herb note.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan until piping hot, adding a splash of vegetable stock if it thickens; add avocado fresh when serving.
