Latin-Style Herb Chicken Bowl with Quinoa and Avocado
Why this recipe works
- Bright, balanced flavour: Lime juice and zest cut through the richness of the chicken and avocado, keeping the bowl fresh rather than heavy.
- Simple but layered seasoning: Garlic, coriander and cumin give the chicken a savoury herbal base without needing a long marinade.
- Practical for lunches: The quinoa and chicken hold well in the fridge, while the avocado can be added just before serving for the best colour and texture.

Timing notes
- Short marinating is enough: The lime, garlic and coriander flavour the chicken quickly, so even the time it takes to cook the quinoa is useful.
- Rest before slicing: Letting the chicken rest briefly helps keep the juices in the meat rather than losing them on the board.
Make-ahead tips
- Keep the avocado separate: Store the cooked chicken, quinoa and tomatoes together if needed, but slice the avocado just before eating.
- Reheat gently: Warm the quinoa and chicken until piping hot, adding a splash of water if the grains seem dry.
Ingredient notes
- Use firm-ripe avocado: A ripe but firm avocado gives creaminess while still holding its shape in the bowl.
- Fresh coriander matters here: Fresh coriander provides the clean, citrusy finish that defines the bowl; dried coriander will not give the same brightness.
Common mistakes
- Avoid a low pan heat: The chicken needs medium-high heat to brown properly; too gentle a heat can make it steam instead.
- Leave excess marinade behind: Lift the chicken from the bowl rather than tipping in all the marinade, which helps it sear cleanly.

Ingredients
Instructions
- Finely grate the garlic into a bowl. Chop most of the fresh coriander, reserving a little for serving, then zest and juice the lime. Stir in 2 tbsp of the extra virgin olive oil, the ground cumin and 0.75 tsp of the fine sea salt.
- Before adding the chicken, spoon 2 tbsp of the herb mixture into a separate clean bowl, cover and refrigerate for the dressing. Add the chicken thighs to the remaining mixture and turn to coat well. Cover and marinate in the fridge while you cook the quinoa.
- Rinse the quinoa, then tip into a saucepan with the water and 0.5 tsp of the fine sea salt. Bring to the boil, cover, then simmer gently for 12–15 minutes until the water is absorbed and the quinoa is tender. Remove from the heat and leave covered for 5 minutes, then fluff with a fork.
- Heat a large frying pan over a medium-high heat and add the remaining 1 tbsp extra virgin olive oil. Lift the chicken from the marinade, discard the used marinade, and cook for 5–7 minutes per side until deeply browned and the thickest part reaches at least 74°C (165°F) on a food thermometer, cooking longer if needed. Rest on a clean board for 2 minutes, then slice with a clean knife.
- Halve the cherry tomatoes and slice the avocado. Divide the quinoa between two bowls, top with the chicken, tomatoes and avocado, then spoon over the clean herb dressing reserved before adding the chicken. Finish with the reserved coriander and an extra squeeze of lime if you like.
Recipe notes
Tips
- For the best flavour, marinate the chicken for up to 30 minutes if you have time, keeping it covered in the fridge throughout.
- If you are meal-prepping, keep the avocado whole and slice it just before eating so it stays green.
- For everyone, including anyone who is pregnant, elderly, or immunocompromised, check that the thickest part of the chicken reaches at least 74°C (165°F) with a food thermometer; colour alone is not a reliable guide.
Substitutions
- Replace Fresh coriander with Fresh parsley for a milder, less citrusy herb finish.
- Replace Ground cumin with Curry powder for a warmer, more aromatic spice profile.
Storage
- Refrigerate up to 3 days
- Store the quinoa, chicken and tomatoes in an airtight container in the fridge. Add the avocado and any extra lime just before serving; reheat the chicken and quinoa in the microwave until piping hot, or warm in a frying pan over a medium heat with a splash of water.
