Honey and Garlic Glazed Salmon
Why this recipe works
- Fast weeknight method: The rice and broccoli cook while the salmon is seared, keeping the whole meal comfortably under 30 minutes.
- Sweetness with balance: Lime juice and soy sauce keep the honey glaze from tasting overly sweet, giving the sauce a sharper savoury finish.
- Good texture contrast: A dry salmon fillet sears well in the pan, while the glossy glaze, fluffy rice and just-tender broccoli make the plate feel complete.

Texture tips
- Dry the salmon well: Patting the fish dry before it hits the pan helps it brown rather than steam.
- Finish gently in the glaze: Once the sauce goes in, reduce the heat and spoon it over the salmon briefly so the fish stays moist.
Common mistakes
- Boiling the glaze too hard: Honey can catch quickly, so keep the sauce bubbling steadily rather than boiling aggressively.
- Overcrowding the pan: Leave space around the salmon fillets so they sear cleanly and the glaze reduces properly.
Ingredient swaps
- Use lemon instead of lime: Lemon gives a similar citrus lift if lime is unavailable, though the flavour will be slightly sharper.
- Use a milder oil: Olive oil can replace sesame oil for a softer, less nutty flavour.
Make-ahead tips
- Prep the sides first: Slice the spring onion, cut the broccoli and mix the glaze before cooking the salmon so the final steps move quickly.
- Reheat gently: Warm leftovers over low heat with a splash of water or microwave in short bursts to avoid drying out the fish.

Instructions
- Rinse the jasmine rice until the water runs mostly clear, then cook it in a saucepan with a tight-fitting lid according to the packet instructions. Keep it covered off the heat once tender so it stays fluffy. While it cooks, cut the broccoli into small florets and slice the spring onion.
- Steam the broccoli until bright green and just tender, about 4 to 6 minutes. Keep it warm while you finish the salmon. If your steamer sits over the rice pan, you can steam it while the rice finishes.
- Finely grate or crush the garlic, then mix it with the honey, soy sauce, the juice of the lime, and half the sesame oil. Set aside 1 tablespoon of the glaze for serving. Pat the salmon dry so it sears well.
- Heat the remaining sesame oil in a large frying pan over medium-high heat. Add the salmon and cook for 3 to 4 minutes until well browned, then turn and cook for 2 minutes. Reduce the heat to medium.
- Pour the glaze into the pan and let it bubble for 1 to 2 minutes, spooning it over the salmon until thick, sticky and glossy. The salmon is ready when it flakes easily and is opaque through the thickest part. Remove from the heat and rest for 1 minute.
- Serve the salmon over the rice with the broccoli alongside. Drizzle over the reserved glaze and scatter with the spring onion. Squeeze over any remaining lime juice to taste.
Recipe notes
Tips
- For the best sear, make sure the salmon is very dry before it goes into the hot pan, and avoid moving it until it releases easily.
- Keep the glaze at a lively simmer, not a hard boil, so it reduces to a glossy coating without catching.
- If serving to anyone who is pregnant, elderly, or immunocompromised, cook the salmon until fully opaque and piping hot throughout.
Substitutions
- Replace lime with lemon for a similar citrus lift.
- Replace sesame oil with olive oil for a milder flavour.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat gently in a frying pan over low heat with a splash of water until piping hot, or microwave in short bursts; take care not to overcook the salmon.
