Polish Beetroot Grain Bowl (Roasted Beetroot and Barley Salad)

Roasted beetroot and pearl barley make a hearty Polish-inspired grain bowl with the character of a robust salad: earthy, slightly sweet beetroot, chewy grains, sharp gherkins and fresh dill brought together with a creamy horseradish and lemon dressing. The flavours echo familiar Polish pairings of beetroot, pickles, dill and horseradish, but the format is practical and modern, suited to lunch bowls, meal prep or a generous side. Toasted pumpkin seeds add a nutty crunch, while the salad holds well warm or at room temperature.

Why this recipe works

  • Earthy, sharp and fresh: Sweet roasted beetroot and nutty barley are balanced by pickles, lemon, horseradish and dill.
  • Good texture contrast: Tender beetroot, chewy barley and toasted pumpkin seeds keep each bite varied rather than heavy.
  • Holds well: The sturdy grains and roasted vegetables keep their structure, making the salad practical for lunches over several days.

Ingredient notes

  • Check the horseradish strength: Prepared horseradish varies widely, so taste the dressing before adding more.
  • Steam-dry the barley: Let the drained barley sit briefly so excess moisture evaporates and the dressing clings properly.
  • Adjust the sharpness: A little extra lemon juice makes the dressing brighter if the beetroot tastes especially sweet.

Ingredient swaps

  • Make it gluten-free: Replace the pearl barley with quinoa for a gluten-free version with a lighter texture.
  • Use Greek yoghurt: Greek yoghurt can replace crème fraîche for a tangier, lighter dressing.
  • Change the pickle note: Pickled onions can stand in for dill pickles if you prefer a sweeter, softer acidity.

Make-ahead tips

  • Keep the seeds separate: Store the toasted pumpkin seeds apart from the salad so they stay crisp.
  • Good for packed lunches: The salad keeps well in the fridge for up to 3 days and can be served chilled or brought to room temperature.
  • Refresh before serving: If the dressing thickens in the fridge, loosen the salad with a squeeze of lemon before eating.

Common mistakes

  • Avoid a watery dressing: Do not mix the barley while it is still wet from draining, or the creamy dressing will thin out.
  • Keep the barley slightly firm: Cook the barley until tender with a little bite so it does not become heavy once dressed.
  • Watch the pumpkin seeds: Toast them over a medium heat and stir often; they can move from nutty to scorched quickly.

  1. Heat the oven to 220°C (430°F). Scrub the beetroot, trim any long roots, then cut into bite-sized wedges. Toss with 1 tbsp of the olive oil, 0.5 tsp of the fine sea salt and a pinch of the black pepper.
  2. Spread the beetroot on a baking tray and roast for 30 to 35 minutes, turning once, until tender and lightly caramelised at the edges. If the tray looks dry, add a splash of water to help the beetroot steam and finish cooking. Leave to cool slightly while you prepare the rest.
  3. Meanwhile, cook the pearled barley in a saucepan of well-salted boiling water until tender with a little bite, 25 to 30 minutes. Drain well in a colander and let it steam-dry for 2 minutes. Tip into a mixing bowl and toss with 1 tsp lemon juice to keep it bright.
  4. Thinly slice the red onion and finely chop the dill pickles. Roughly chop the fresh dill. Add the onion, pickles and most of the dill to the barley, reserving a little dill for serving.
  5. Whisk the crème fraiche with the horseradish, 1 tbsp lemon juice, the remaining 1 tbsp olive oil, 0.75 tsp fine sea salt and the remaining black pepper. Taste and add a little more lemon juice if you want it sharper. The dressing should be creamy but spoonable.
  6. Toast the pumpkin seeds in a dry frying pan over a medium heat for 2 to 3 minutes, stirring, until they smell nutty and start to pop. Add the roasted beetroot to the bowl, then fold through most of the dressing. Divide between two bowls and finish with the toasted pumpkin seeds and reserved dill.

Recipe notes

Tips

  • For the best texture, drain the barley thoroughly and let it steam-dry before mixing so the dressing clings rather than turning watery.
  • If you are sensitive to raw onion, soak the sliced red onion in cold water for 10 minutes, then drain well before adding.
  • Horseradish strength varies, so start with the stated amount, taste the dressing, then add a little more if you want extra heat.

Substitutions

  • Replace Crème fraiche with Greek yogurt for a lighter, tangier dressing.
  • Replace Pearled barley with quinoa for a gluten-free grain bowl.
  • Replace Dill pickles with pickled onions for a sweeter, softer pickle note.

Storage

  • Refrigerate up to 3 days
  • Store in an airtight container in the fridge. Keep the pumpkin seeds separate if possible to maintain crunch. Serve chilled or bring to room temperature; if it thickens, loosen with a squeeze of lemon.
