Spanish-Style Grain Bowl with Chickpeas and Peppers
Why this recipe works
- Layered savoury flavour: Smoked paprika, cumin, garlic and browned peppers give the chickpeas depth before the dressing is added.
- Bright, balanced finish: Sherry vinegar cuts through the olive oil and chickpeas, keeping the bowl lively rather than heavy.
- Good for meal prep: The quinoa, chickpeas and peppers hold well in the fridge and can be served cold, warm or at room temperature.

Ingredient notes
- Rinse the quinoa well: Rinsing helps remove the natural bitterness from quinoa and gives the cooked grains a cleaner, lighter finish.
- Use good smoked paprika: Smoked paprika is central to the flavour here, so a fresh, aromatic jar will make the bowl taste fuller and more rounded.
- Adjust the vinegar to taste: Sherry vinegar should taste bright but not harsh; add a little more olive oil if the dressing feels too sharp.
Texture tips
- Let the quinoa steam: Leaving the pan covered off the heat helps the grains finish steaming, then fluffing separates them without making them mushy.
- Avoid overcooking the peppers: Cook the peppers until softened and lightly browned at the edges so they stay sweet and tender rather than collapsing.
Make-ahead tips
- Pack for lunches: Cool the bowl completely before refrigerating, then eat it cold or reheat gently with a small splash of water.
- Keep the dressing separate if preferred: For the freshest texture, store the quinoa and chickpeas separately from the dressing and combine before serving.
Ingredient swaps
- Change the grain: Bulgur makes the bowl softer and more wheat-like, while keeping the same savoury paprika and vinegar profile.
- Swap the vinegar: Red wine vinegar can replace sherry vinegar if needed, giving a similar sharpness with a slightly different character.

Instructions
- Rinse the quinoa well, then tip into a saucepan with 300 ml water and half the fine sea salt. Bring to the boil, cover, then simmer gently for 12–15 minutes until the water is absorbed and the quinoa is tender. Take off the heat and leave covered for 5 minutes, then fluff with a fork.
- Meanwhile, finely slice the onion, slice the red pepper, and finely grate the garlic. Heat 1 tbsp of the extra virgin olive oil in a large frying pan over medium-high heat. Sauté the onion and pepper for 6–8 minutes until softened and lightly browned at the edges.
- Drain and rinse the chickpeas, then add them to the pan with the garlic, smoked paprika, ground cumin, black pepper and the remaining fine sea salt. Cook for 4–6 minutes, stirring, until the chickpeas are hot and well coated in the spices. If the pan looks dry, add a small splash of water to help the spices cling.
- In a mixing bowl, whisk together the sherry vinegar with the remaining 2 tbsp extra virgin olive oil. Finely chop the fresh parsley and stir most of it into the dressing, reserving a little for the top. Taste and adjust with a pinch more black pepper if you like.
- Divide the quinoa between two bowls and spoon over the spiced chickpeas and peppers. Drizzle with the paprika dressing and finish with the reserved parsley. Serve warm, or leave to cool slightly for a room-temperature bowl.
Recipe notes
Tips
- Rinsing the quinoa thoroughly helps remove bitterness and keeps the grains fluffy.
- For deeper flavour, let the chickpeas sit in the pan for 30–60 seconds between stirs so they pick up a little colour without burning the spices.
- If serving at room temperature, toss everything with the dressing while still warm so it absorbs more flavour.
Substitutions
- Replace sherry vinegar with red wine vinegar for a similar sharpness.
- Replace fresh parsley with fresh coriander for a different, citrusy herb finish.
- Replace quinoa with bulgur for a more traditional wheat-based grain bowl.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Eat cold, or reheat in a frying pan with a splash of water over medium heat until piping hot.
