Air Fryer Beef Rice Bowl

A beef rice bowl is a quick, complete meal in the donburi-style tradition: warm rice as the base, a savoury protein on top and fresh vegetables for crunch. Here, minced beef is browned in the air fryer, then coated in a glossy soy, gochujang and toasted sesame oil dressing that brings saltiness, gentle heat and deep umami. Jasmine rice keeps the bowl fragrant and soft, while cucumber, carrot, spring onion and sesame seeds add freshness and texture. It is well suited to weeknight cooking because the components are simple, fast and easy to vary at the table.

Why this recipe works

  • Fast cooking: Minced beef browns quickly in the air fryer while the rice rests and the vegetables are prepared.
  • Big savoury flavour: Soy sauce, gochujang and toasted sesame oil coat the hot beef in a glossy, spicy-savoury sauce without needing a long simmer.
  • Fresh contrast: Warm rice and rich beef are balanced by cold cucumber, shredded carrot, spring onion and crunchy sesame seeds.
  • Straightforward method: The recipe uses simple prep, a short air-fryer cook and an easy bowl assembly, making it practical for weeknights.

Adjust the heat

  • For a milder bowl: Use less gochujang and keep extra sauce on the side so the heat can be adjusted at the table.
  • For more heat: Increase the gochujang slightly after tasting the sauce, then toss with the hot beef so it coats evenly.
  • Keep the balance: Serve the vegetables cold and crisp; cucumber and rice help soften the chilli heat in each bite.

Timing notes

  • Let the rice rest: Keeping the rice covered off the heat helps it finish steaming and gives a fluffier texture when forked through.
  • Best served straight away: Assemble just before eating so the beef stays warm and the raw vegetables keep their crunch.

Ingredient notes

  • Gochujang varies: Different brands can range from gently sweet to quite hot, so taste the sauce before coating the beef.
  • Rinse the rice: Rinsing jasmine rice removes excess surface starch and helps the grains cook up lighter rather than sticky.
  • Use toasted sesame oil for flavour: Toasted sesame oil is used for its nutty aroma in the sauce, not as the main cooking fat.

Make-ahead tips

  • Store components separately: Keep the cooked beef and rice in separate airtight containers, and add the raw vegetables fresh when serving.
  • Reheat until piping hot: Reheat the beef in the air fryer at 180°C (355°F) until piping hot, and loosen the rice with a little water before microwaving.
  • Prep some vegetables ahead: Carrot and spring onion can be prepared in advance, but cucumber is best cut closer to serving for a crisper finish.

  1. Rinse the jasmine rice until the water runs mostly clear, then put it in a saucepan with the water. Bring to the boil, cover, then cook on the lowest heat for 10 minutes. Take off the heat and leave covered for 10 minutes, then fluff with a fork.
  2. Heat the air fryer to 200°C (390°F). Spread the minced beef in the air fryer basket in an even layer and cook for 6 minutes, shaking and breaking it up halfway. Cook until browned and no longer pink.
  3. In a mixing bowl, stir together the soy sauce, gochujang and toasted sesame oil. Tip in the hot beef and toss well so it turns glossy. If you want it stickier, return the beef to the air fryer for 1 to 2 minutes.
  4. While the beef cooks, shred the carrot and cut the cucumber into thin matchsticks. Thinly slice the spring onion. Keep the vegetables crisp and cold until serving.
  5. Divide the rice between two bowls and spoon over the gochujang beef. Top with the carrot, cucumber and spring onion, then sprinkle with roasted sesame seeds. Serve straight away.

Tips

  • For the best texture, spread the beef in a thin layer and break it up well halfway so it browns rather than steams.
  • If you are serving anyone who is vulnerable, make sure the beef is cooked until fully browned with no pink remaining.

Substitutions

  • Replace Soy sauce with Light soy sauce for a slightly lighter, saltier finish.

Storage

  • Refrigerate up to 2 days
  • Store the cooked beef and rice in separate airtight containers. Reheat the beef in the air fryer at 180°C (355°F) for 3 to 5 minutes until piping hot, and microwave the rice with a splash of water; add the raw vegetables fresh.
