Skillet Cornbread and Black Bean Chilli
Why this recipe works
- One-pan efficiency: The chilli simmers and the cornbread bakes in the same skillet, keeping the method streamlined and reducing washing-up.
- Good texture contrast: A thick bean chilli supports the cornbread topping, giving a spoonable base with a soft, cheesy crumb and golden surface.
- Hearty and satisfying: Black beans, tomatoes, cheddar and cornmeal create a filling vegetarian main with smoky depth and familiar savoury flavours.

Texture tips
- Thicken the chilli before topping: The bean mixture should be thick and spoonable before the batter goes on; if it looks loose, simmer it a little longer so the cornbread does not sink.
- Keep the cornbread tender: Stir the wet and dry ingredients just until combined. Overmixing can make the topping dense rather than soft.
- Spread gently to the edges: Spoon the batter over the hot chilli and nudge it outward without pressing down, helping it bake into an even golden layer.
Common mistakes
- Starting with a watery chilli: A loose chilli base can make the topping heavy and uneven. Reduce it until it holds its shape slightly when stirred.
- Not checking the cornbread centre: The top may colour before the middle is fully baked, so use a skewer to check that the topping comes out clean.
- Adding batter to a cold filling: The chilli should be hot when the batter is added, which helps the topping start cooking evenly from underneath.
Ingredient notes
- Use smoked paprika for depth: Smoked paprika gives the bean chilli its savoury, campfire-style flavour; sweet paprika will make the dish milder and less smoky.
- Buttermilk keeps the crumb soft: Buttermilk adds gentle tang and helps create a tender cornbread texture. A milk and lemon juice substitute works if buttermilk is unavailable.
- Choose a good melting cheese: Cheddar adds sharper flavour, while Monterey Jack gives a milder, meltier topping.
Make-ahead tips
- Prepare the chilli ahead: The bean chilli can be cooked in advance and refrigerated, then reheated until hot before adding the cornbread batter and baking.
- Reheat gently: Covered leftovers reheat well in a 180°C (355°F) oven until piping hot, or as individual portions in the microwave.
- Freeze in portions: Cool completely, wrap portions well and freeze. Defrost overnight in the fridge before reheating thoroughly.

Instructions
- Heat the oven to 200°C (390°F). Finely chop the onion and dice the red pepper.
- Heat 1 tbsp vegetable oil in a large ovenproof cast-iron frying pan over a medium heat. Add the onion and red pepper with a pinch of the salt and cook for 6 to 8 minutes, stirring, until softened and starting to colour.
- Stir in the cumin and smoked paprika and cook for 30 seconds until fragrant. Add the tomatoes, black beans and water, then bring to a gentle simmer and cook for 10 to 12 minutes until thick and spoonable; season with the remaining salt and the black pepper.
- Meanwhile, in a mixing bowl whisk together the cornmeal, plain flour and baking powder. In a second bowl whisk the egg, buttermilk and 2 tbsp vegetable oil, then stir into the dry ingredients just until combined.
- Stir most of the cheddar into the batter, reserving a small handful for the top. Spoon the cornbread batter over the hot chilli and gently spread it to the edges, then scatter over the reserved cheddar.
- Bake for 18 to 22 minutes until the cornbread is golden and a skewer inserted into the topping comes out clean. Rest for 5 minutes, then roughly chop the coriander and scatter it over the top before serving straight from the pan.

Tips
- If your skillet is not ovenproof, simmer the chilli in a frying pan, then transfer it to a baking dish before adding the cornbread topping and baking.
- For a thicker chilli, simmer for an extra 3 to 5 minutes before topping, stirring often so it does not catch on the base.
- If serving vulnerable groups, make sure the cornbread is fully baked through and piping hot before serving.
Substitutions
- Replace Buttermilk with Whole milk mixed with 1 tbsp Lemon juice; leave for 5 minutes before using.
- Replace Cheddar cheese with Monterey jack cheese for a milder, meltier topping.
- Replace Smoked paprika with Sweet paprika for a less smoky flavour.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven for 15 to 20 minutes until piping hot, or microwave individual portions until hot throughout. Freeze portions well wrapped for up to 2 months and defrost overnight in the fridge before reheating.
