Skillet Turkey Chilli with Cornbread Topping
Why this recipe works
- One-pan efficiency: The chilli simmers and bakes in the same ovenproof skillet, keeping the workflow compact and the washing-up manageable.
- Chilli and cornbread contrast: A thick, spoonable filling supports the cornbread topping so it bakes into a golden crust with a soft underside.
- Built-in depth: Onion, garlic, cumin and chilli powder season the turkey before tomatoes and beans simmer down into a rich base.

Adjust the heat
- For gentler heat: Use mild chilli powder in place of hot chilli powder, then adjust at the end if you want a little more warmth.
- For extra heat: Choose a hotter chilli powder or add a pinch of chilli flakes when the spices go into the pan.
Texture tips
- Thicken before topping: The chilli should be thick enough for a spoon to leave a trail before the batter is added; if it looks loose, simmer uncovered a little longer.
- Keep the cornbread tender: Stir the wet and dry ingredients just until combined. Overmixing can make the topping heavier.
Make-ahead tips
- Prepare the chilli ahead: The turkey chilli can be cooked in advance, cooled and refrigerated, then reheated gently before adding the cornbread topping and baking.
- Reheat until hot throughout: Reheat portions in a 180°C (355°F) oven until piping hot; the cornbread will soften slightly but still works well.
- Freezer-friendly portions: Freeze cooked portions once completely cooled, then defrost overnight in the fridge before reheating.
Common mistakes
- Adding batter to runny chilli: If the filling is too loose, the topping can sink and steam rather than bake properly. Reduce the chilli until it is thick and spoonable.
- Not checking the topping: Bake until the cornbread is golden and a skewer inserted into the topping comes out clean.

Instructions
- Heat the oven to 200°C (390°F). Finely chop the onion and crush the garlic.
- Heat 1 tbsp vegetable oil in an ovenproof cast-iron frying pan over medium heat. Add the onion with 1 tsp fine sea salt and cook for 6 to 8 minutes until softened and lightly golden.
- Stir in the garlic, ground cumin and hot chilli powder and cook for 30 seconds until fragrant. Add the minced turkey and cook for 5 to 7 minutes, breaking it up, until no longer pink.
- Stir in the tomatoes, red kidney beans, water and black pepper. Bring to a gentle simmer, then cook for 20 to 25 minutes, stirring occasionally, until thick enough that a spoon leaves a trail.
- Meanwhile, whisk together the cornmeal, plain flour, baking powder and remaining 1 tsp fine sea salt in a mixing bowl. In a second bowl, whisk the egg with the buttermilk and 2 tbsp vegetable oil, then stir into the dry ingredients just until combined.
- Taste the chilli and adjust with a pinch more fine sea salt if needed. Spoon the cornbread batter over the chilli and gently spread it to the edges.
- Bake for 18 to 22 minutes until the cornbread is golden and a skewer inserted into the topping comes out clean. Rest for 5 minutes, then spoon through the cornbread crust to serve.
Recipe notes
Tips
- If your skillet is not ovenproof, simmer the chilli in a large frying pan, then transfer to a baking dish before adding the cornbread topping.
- For a thicker chilli, simmer uncovered for the final 5 minutes so excess liquid evaporates before topping with the batter.
- If serving vulnerable groups, make sure the turkey is cooked through and piping hot before baking, and serve the finished dish hot.
Substitutions
- Replace buttermilk with kefir for a similarly tangy cornbread topping.
- Replace hot chili powder with mild chili powder for a gentler heat.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat portions in a 180°C (355°F) oven for 15 to 20 minutes until piping hot; the cornbread will soften slightly. Freeze for up to 2 months and defrost overnight in the fridge before reheating.
