Low Country Boil (Prawns, Sausage, Corn and Potatoes)
Why this recipe works
- Built in one pot: The potatoes, sausage, corn and prawns cook sequentially in the same seasoned broth, keeping the method simple and the flavours connected.
- Seasoned from the inside out: Lemon, garlic, bay leaves and cayenne flavour the cooking water so the potatoes and prawns absorb more than surface seasoning.
- Made for sharing: Draining the pot and piling everything onto a platter creates an easy, informal main course with plenty of variety in each serving.

Timing notes
- Serve immediately: This is best eaten as soon as it is drained, while the prawns are tender, the butter melts through, and the potatoes are still hot.
- Stagger the additions: Add the ingredients in stages so the potatoes have time to soften without the prawns becoming overcooked.
Adjust the heat
- For less heat: Replace the cayenne with smoked paprika for a gentler, smoky finish.
- For more warmth: Increase the cayenne slightly or finish with an extra pinch at the table so diners can control the heat.
Authenticity notes
- Lowcountry-style cooking: Seafood boils are associated with the coastal American South, where shellfish, corn, potatoes and sausage are commonly cooked together for informal sharing meals.
- Serve family-style: The drained boil is typically presented as one generous spread rather than plated individually, making it well suited to relaxed group dining.
Common mistakes
- Overcooking the prawns: Add the prawns last and remove the pot from the heat once they are pink and opaque; too much time in the broth can make them rubbery.
- Not checking the sausage: If using raw smoked sausage rather than fully cooked sausage, simmer it until cooked through before adding the corn and prawns.
- Storing too slowly: Cool leftovers quickly and refrigerate them in an airtight container, then reheat gently until piping hot without boiling the prawns hard.

Ingredients
Instructions
- Fill a large stockpot with plenty of water and bring to the boil. Meanwhile, scrub the potatoes, peel and lightly crush the garlic, and cut the lemon in half. Slice the smoked sausage into thick rounds.
- Add the potatoes to the boiling water and cook for 10 minutes. Add the garlic, lemon halves, bay leaves and cayenne pepper, then return to a lively simmer. Cook for 5 minutes so the broth becomes fragrant.
- Add the smoked sausage and simmer for 5 minutes. Add the canned corn and simmer for 3 minutes. The potatoes should be nearly tender when pierced with a knife.
- Add the prawns and cook for 2 to 3 minutes, just until pink and opaque. Drain everything well in a colander, discarding the bay leaves and lemon halves. Tip the boil onto a large serving platter or straight back into the pot for serving.
- Melt the unsalted butter and drizzle it over the hot prawns, sausage, corn and potatoes. Finely chop the fresh parsley and sprinkle over the top. Serve immediately while everything is piping hot.
Recipe notes
Tips
- Keep the prawns for last and cook only until just pink and opaque, as they turn rubbery if overcooked.
- If your smoked sausage is already cooked, you are simply heating it through; if it is raw, simmer it until it is cooked through before adding the corn and prawns.
- For anyone who is pregnant, elderly, or immunocompromised, make sure the prawns are fully cooked through and served piping hot.
Substitutions
- Replace cayenne pepper with smoked paprika for a milder, smokier heat.
- Replace fresh parsley with fresh dill for a more herby finish.
- Replace unsalted butter with olive oil for a lighter finish.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in an airtight container. Reheat gently in a covered saucepan with a splash of water until piping hot, and avoid overcooking the prawns.
