Vegetarian Black Bean Burgers
Why this recipe works
- Crisp outside, tender centre: Drying the beans well and pan-frying the patties gives them a golden crust without making the middle dry.
- Savoury depth: Softened onion, cumin and smoked paprika build a smoky, earthy base that suits the natural richness of black beans.
- Easy to make ahead: The cooked patties keep well in the fridge or freezer, making them useful for quick vegetarian dinners.

Texture tips
- Dry the beans thoroughly: After rinsing, pat the black beans as dry as possible so the patties fry rather than steam in the pan.
- Let a wet mixture stand: If the mixture feels soft, rest it briefly so the breadcrumbs can absorb moisture before shaping.
- Use steady medium heat: A moderate heat gives the patties time to warm through while developing a deep golden crust.
Make-ahead tips
- Cook ahead for easy meals: Cool the cooked patties fully, then store them in a sealed container in the fridge for quick reheating.
- Freeze with layers separated: Place baking paper between cooked patties before freezing so they are easy to separate later.
- Reheat in a frying pan: Warm the patties in a lightly oiled pan over a medium-low heat until piping hot and crisp again.
Ingredient notes
- Canned black beans work well: They are convenient and soft enough to mash, but draining and rinsing them keeps the flavour clean.
- Smoked paprika adds depth: It gives the patties a gentle smoky note; use regular paprika if you prefer a milder, less smoky finish.
- Shape firmly: Press the patties together well and smooth the edges to help prevent cracking during frying.

Ingredients
Instructions
- Peel and finely chop the onion. Warm 1 tbsp of the olive oil in a frying pan over a medium heat, then cook the onion for 6 to 8 minutes until soft and lightly golden. Tip into a mixing bowl and let it cool for 2 minutes.
- Drain and rinse the black beans, then pat them dry as well as you can. Add them to the bowl and mash until mostly broken down but still a little chunky. Stir in the cumin and smoked paprika.
- Beat in the egg, then mix in the breadcrumbs until the mixture holds together when pressed. Shape into 4 patties, pressing firmly so the edges do not crack. If the mixture feels wet, leave it to stand for 5 minutes so the breadcrumbs can hydrate.
- Heat the remaining 1 tbsp olive oil in the pan over a medium heat. Pan-fry the patties for 4 to 5 minutes per side until deeply golden and crisp, turning carefully with a spatula. If they brown too quickly, lower the heat so they heat through without burning.
- Split the burger buns and toast them cut-side down in the pan for 1 to 2 minutes until lightly golden. Slice the tomato and separate the lettuce leaves. Build the burgers with lettuce, tomato and a black bean patty, then serve straight away.

Tips
- Drying the black beans well helps the patties crisp up and stops them from feeling soft in the middle.
- For neater patties, press the mixture firmly into shape and smooth any cracks around the edges before frying.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, use eggs stamped with the British Lion mark or another pasteurised egg product.
Substitutions
- Replace the yellow onion with shallot for a slightly sweeter, milder flavour.
- Replace the smoked paprika with ground paprika for a less smoky finish.
Storage
- Refrigerate up to 3 days
- Cool the cooked patties, then refrigerate in a sealed container. Reheat in a lightly oiled frying pan over a medium-low heat for 3 to 4 minutes per side until piping hot, or freeze (with baking paper between patties) for up to 2 months and defrost overnight in the fridge before reheating.
