Salsicce e Lenticchie (Italian Sausages with Lentils)
Why this recipe works
- Built-in depth: Browning the sausages first leaves savoury fond in the pot, which seasons the lentils and enriches the cooking liquid.
- One-pot cooking: The sausages, soffritto-style vegetables, lentils and stock cook together, keeping the method straightforward and the sauce naturally cohesive.
- Hearty but balanced: Earthy lentils, pork sausage, rosemary and tomato create a satisfying dish with enough moisture to feel generous rather than heavy.

Ingredient notes
- Choose lentils that hold their shape: Green lentils suit this dish because they become tender without collapsing too quickly into the sauce.
- Use well-seasoned sausages: Italian pork sausages provide much of the flavour, so a good-quality sausage with fennel, garlic or herb seasoning will give the best result.
- Fresh herbs work best: Fresh rosemary gives a clean, resinous note during simmering; thyme is a softer alternative if preferred.
Common mistakes
- Boiling too hard: Keep the pan at a gentle simmer. Vigorous boiling can split the lentils and turn the sauce cloudy.
- Letting it dry out: The finished dish should be saucy, with enough lentil juices to spoon over each serving. Add a little more stock if the pan looks dry.
- Not checking the sausages: Make sure the sausages are cooked through and piping hot in the centre before serving.
Make-ahead tips
- Good for leftovers: The lentils keep well in the fridge and the flavour continues to settle, making this a practical make-ahead dinner.
- Loosen when reheating: Leftovers thicken as they stand, so reheat gently with a splash of stock to restore the saucy texture.
- Freezes well: Cool completely before freezing, then defrost overnight in the fridge and reheat until piping hot throughout.
Authenticity notes
- Italian home-style cooking: Sausages and lentils are a classic rustic pairing in Italian cooking, built around simple ingredients and slow, gentle simmering.
- Soffritto base: Onion, carrot and celery form the aromatic base, giving the lentils sweetness and depth before the stock is added.

Ingredients
Instructions
- Heat the olive oil in a Dutch oven over medium-high heat. Add the sausages and brown well all over, 6 to 8 minutes. Transfer to a plate.
- Reduce the heat to medium. Dice the onion, carrot and celery, then add them to the pot with a pinch of the salt and cook until softened, 6 to 8 minutes, scraping up any browned bits. Crush in the garlic and cook for 30 seconds until fragrant.
- Stir in the rosemary and tomatoes and cook for 2 minutes to thicken slightly. Add the lentils, chicken stock, remaining salt and the black pepper, then return the sausages (and any juices) to the pot. Bring to a gentle simmer.
- Cover and simmer gently for 25 to 30 minutes, stirring once or twice, until the lentils are tender and the sausages are cooked through. If it looks dry, add a splash more stock; it should be saucy with plenty of lentil juices. Taste and adjust seasoning with a little more salt and pepper if needed.
- Rest off the heat for 5 minutes so the lentils settle and the sauce thickens slightly. Serve hot, spooning plenty of the lentils and cooking liquid over each portion.
Recipe notes
Tips
- For the best texture, keep the simmer gentle; a hard boil can split the lentils and make the sauce cloudy.
- If you are serving vulnerable groups, ensure the sausages are cooked until piping hot throughout with no pink remaining.
- Leftovers often thicken; loosen with a little chicken stock when reheating to bring back the saucy consistency.
Substitutions
- Replace Fresh rosemary with fresh thyme for a softer, more floral herb note.
- Replace Chicken stock with vegetable broth for a lighter, less meaty base.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Freeze for up to 2 months; defrost overnight in the fridge and reheat gently on the hob with a splash of chicken stock until piping hot.
