Nordic Salmon Bowl with Barley and Dill Skyr Dressing

A Nordic-style salmon bowl brings together the clean, briny flavours often associated with Scandinavian cooking in a practical grain-bowl format. Pearled barley gives the base a nutty chew, while baked salmon adds richness without making the dish feel heavy. The cucumber, radish and caper salad keeps each bite crisp and sharp, and the lemon-dill skyr dressing ties the warm grain and cool vegetables together with tang and freshness. It works especially well for lunch, offering a satisfying mix of protein, wholegrain texture and bright, simple seasoning.

Why this recipe works

  • Good texture contrast: Chewy barley, flaky salmon and crisp cucumber and radish keep the bowl varied and satisfying.
  • Bright, balanced dressing: Lemon, dill and thick yoghurt cut through the richness of the salmon without overwhelming it.
  • Works for lunch prep: The cooked barley, salmon, salad and dressing can be stored separately, then assembled when needed.

Ingredient notes

  • Choose a thick yoghurt: Skyr or Greek-style yoghurt gives the dressing body and helps it cling to the salmon and barley.
  • Check the capers: Capers vary in saltiness, so rinse them briefly if they taste very sharp or briny.
  • Steam-dry the barley: Letting the barley drain well prevents excess water from thinning the dressing in the bowl.

Texture tips

  • Keep the salmon just cooked: Bake until the thickest part is opaque and flakes easily; cooking it much further can make it dry.
  • Assemble just before serving: Add the salad and dressing at the end so the vegetables stay crisp and the barley keeps its chew.

Make-ahead tips

  • Store in separate containers: Keep the barley, salmon, salad and dressing apart in the fridge for the best texture.
  • Reheat gently: Warm the barley and salmon in a 180°C (355°F) oven until piping hot, then add the cool salad and dressing.

  1. Heat the oven to 200°C (390°F). Rinse the pearled barley in a colander, then tip into a saucepan with plenty of water and 1 tsp of the fine sea salt.
  2. Bring the barley to the boil, then simmer for 25 to 30 minutes until tender with a little chew. Drain well and let it steam-dry in the colander for a minute.
  3. Put the salmon on a baking tray and rub with 1 tbsp of the extra virgin olive oil and the remaining 0.5 tsp fine sea salt (and black pepper, if using). Bake for 10 to 12 minutes, until just opaque and flaking at the thickest part.
  4. While the salmon bakes, slice the cucumber and radish thinly and put them in a mixing bowl. Add the capers and the remaining 1 tbsp extra virgin olive oil, then toss to coat.
  5. Finely chop the fresh dill. In a small bowl, whisk the yogurt with the zest and juice of the lemon and most of the dill, then taste and adjust with a pinch of fine sea salt if needed.
  6. Divide the barley between two bowls and top with the cucumber and radish salad. Flake the salmon into large pieces and add to each bowl, then spoon over the lemon and dill yogurt dressing and finish with the remaining dill.

Recipe notes

Tips

  • For the best texture, drain the barley thoroughly so it does not water down the dressing.
  • If your capers are very salty, give them a quick rinse and pat dry before adding to the salad.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the salmon is cooked until piping hot throughout.

Substitutions

  • Replace Pearled barley with quinoa for a lighter grain bowl.
  • Replace Yogurt with greek-yogurt for a thicker, richer dressing.
  • Replace Fresh dill with fresh-parsley for a milder, greener flavour.

Storage

  • Refrigerate up to 2 days
  • Store the barley, salmon, salad, and dressing in separate airtight containers for the best texture. Reheat the barley and salmon gently in a 180°C (355°F) oven until piping hot, and add the salad and dressing just before serving.
