Moroccan-Spiced Lamb Meatball Bowl with Couscous
Why this recipe works
- Built-in flavour: Browning the lamb first leaves savoury bits in the pan, which are lifted into the tomato sauce for extra depth.
- Balanced richness: Tomatoes and yoghurt cut through the richness of the lamb, keeping the bowl bright rather than heavy.
- Efficient cooking: The couscous steams off the heat while the meatballs finish simmering, so the components come together without extra fuss.

Ingredient notes
- Choose lamb with some fat: Minced lamb with a little fat gives the meatballs better flavour and helps them stay tender during simmering.
- Use fragrant ground spices: Cumin, coriander and cinnamon are central to the flavour here, so fresh, aromatic spices will make the sauce taste fuller.
- Chop the parsley finely: Fine parsley mixes more evenly through the meatballs and gives a fresher finish when scattered over the bowls.
Texture tips
- Mix gently: Combine the lamb mixture just until evenly seasoned; overworking it can make the meatballs dense.
- Keep the simmer gentle: A steady, gentle simmer lets the sauce reduce while the meatballs cook through without becoming tough.
- Fluff the couscous: Separate the couscous with a fork before serving so it stays light and can absorb the tomato sauce properly.
Make-ahead tips
- Freeze the sauce and meatballs: The cooked meatballs and tomato sauce freeze well; cool them fully before storing in a sealed container.
- Reheat gently: Warm the meatballs and sauce slowly with a splash of water until piping hot, then make the couscous fresh for the best texture.
- Good for packed lunches: Portion the meatballs and sauce with couscous, keeping the yoghurt separate until serving if possible.
Serving ideas
- Fresh finish: Extra parsley and a spoonful of yoghurt add freshness and contrast to the warm spices.
- Add something crisp: A cucumber salad or simple chopped salad works well alongside the saucy couscous bowl.
- For extra brightness: A squeeze of lemon or a sharper yoghurt topping can lift the richness of the lamb.

Ingredients
Instructions
- Finely chop the onion. Crush the garlic. Finely chop the parsley, then set aside about a third for serving.
- In a mixing bowl, combine the lamb with half the onion, half the garlic, half the parsley, the cumin, coriander and cinnamon. Mix until evenly combined, then roll into 12 meatballs.
- Heat 1 tbsp of the olive oil in a large frying pan over medium-high heat. Add the meatballs and cook for 6 to 8 minutes, turning, until well browned all over (they do not need to be cooked through yet). Transfer to a plate.
- Reduce the heat to medium and add the remaining 1 tbsp olive oil to the pan. Add the remaining onion and cook for 6 to 8 minutes until softened and lightly golden, then stir in the remaining garlic for 30 seconds until fragrant. Pour in the chopped tomatoes, scraping up any browned bits.
- Return the meatballs to the pan and bring the sauce to a gentle simmer. Cook for 12 to 15 minutes, turning the meatballs once or twice, until the sauce has thickened slightly and the meatballs are cooked through. Stir in the remaining parsley and take off the heat.
- Meanwhile, bring 200 ml water to the boil in a saucepan. Tip in the couscous, cover, and remove from the heat for 5 minutes, then fluff with a fork. Divide couscous between bowls, spoon over the meatballs and sauce, and finish with a dollop of yoghurt and the reserved parsley.
Recipe notes
Tips
- Keep the sauce at a gentle simmer rather than a rapid boil so the meatballs stay tender and the tomatoes reduce without splashing.
- If you have a thermometer, the meatballs are ready when the centre reaches 71°C (160°F).
- For anyone who is pregnant, elderly, or immunocompromised, use pasteurised yoghurt and ensure the meatballs are cooked through.
Substitutions
- Replace yogurt with greek-yogurt for a thicker, tangier topping.
- Replace couscous with quinoa for a gluten-free bowl.
Storage
- Refrigerate up to 3 days
- Cool the meatballs and sauce, then refrigerate in a sealed container for up to 3 days. Reheat gently in a frying pan with a splash of water until piping hot; make couscous fresh for the best texture. Freeze the meatballs and sauce for up to 2 months, then defrost overnight in the fridge before reheating.
