Mexican-Inspired Bibimbap Bowl with Spiced Beef and Fried Egg

Taking the rice-bowl structure of bibimbap and steering it towards Mexican-inspired flavours, this dinner layers fluffy jasmine rice with spiced minced beef, black beans, charred sweetcorn and a runny fried egg. The separate toppings keep each bite varied: savoury cumin-scented beef, creamy avocado, sweet smoky corn and a sharp tomato, coriander and lime salsa. It is the kind of bowl that works well for a weeknight because the components are simple, but it still feels generous and colourful at the table. Extra lime wedges let everyone adjust the brightness to taste.

Why this recipe works

  • Contrasting textures: Soft rice, browned beef, creamy avocado, charred corn and a runny-yolk egg make each bowl varied without needing extra garnishes.
  • Fresh acidity: Lime and tomato-coriander salsa cut through the richness of the beef, beans, avocado and egg.
  • Easy to adjust: The bowl format makes it simple to vary the heat, swap the protein, or add extra lime at the table.

Authenticity notes

  • Fusion-style interpretation: This is not a traditional Korean bibimbap; it uses the rice-and-toppings structure while replacing classic Korean seasonings with Mexican-inspired beef, beans, corn, avocado and salsa.

Adjust the heat

  • Make it milder: Use smoked paprika instead of mild chilli powder for warmth and colour without noticeable heat.
  • Add more heat: Choose a hotter chilli powder or finish with sliced fresh chilli or hot sauce at the table.
  • Keep the heat balanced: Add lime after cooking rather than during browning so the beef stays savoury while the finished bowl tastes bright.

Texture tips

  • For fluffier rice: Rinse the jasmine rice well and let it stand covered off the heat so the grains finish steaming gently.
  • For better charred corn: Let the kernels sit undisturbed in the hot pan for short bursts before stirring, so they brown rather than simply soften.
  • Keep toppings fresh: Spoon the tomato salsa over just before serving so the rice stays fluffy and the avocado stays clean-tasting.

Make-ahead tips

  • Store in components: Keep the rice, beef and beans together, but store the salsa and avocado separately to protect their texture.
  • Reheat gently: Warm the rice, beef and beans with a splash of water until piping hot, then add a freshly cooked egg and cold toppings.
  • Prep ahead: The corn, onion and garlic can be prepared in advance; slice the avocado just before serving to prevent browning.

  1. Rinse the jasmine rice in cold water until the water runs mostly clear. Tip into a saucepan with 450 ml water, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes.
  2. Meanwhile, slice the kernels from the fresh corn on the cob. Heat 1 tbsp vegetable oil in a large frying pan over a high heat, add the corn and cook for 5 to 7 minutes, stirring occasionally, until charred in spots. Scrape into a bowl.
  3. Finely chop the red onion and garlic. Add the remaining 1 tbsp vegetable oil to the pan over a medium heat, then cook the onion for 3 minutes until softened. Stir in the garlic for 30 seconds until fragrant.
  4. Add the minced beef, ground cumin and mild chili powder, breaking the meat up with a wooden spoon. Cook for 6 to 8 minutes until browned and any liquid has cooked off. Keep the heat at medium so the spices toast without burning.
  5. Drain the canned black beans in a colander and rinse briefly, then add to the beef. Cook for 2 to 3 minutes until the beans are hot, then take off the heat. Taste and adjust with a squeeze of lime if you like it brighter.
  6. Halve the cherry on the vine tomato and finely chop most of the fresh coriander, reserving a little for serving. In a mixing bowl, toss the tomatoes with the coriander and the juice of 1 lime. Cut the remaining lime into wedges for the table.
  7. Halve, stone and slice the avocado. In the same frying pan, fry the eggs over a medium heat for 2 to 3 minutes until the whites are set and the yolks are still runny, or cook to your liking. If needed, do this in batches so the eggs do not crowd.
  8. Fluff the rice and divide between three bowls. Top each with the spiced beef and beans, charred sweetcorn, avocado, and a fried egg, then spoon over the tomato and coriander salsa. Serve with lime wedges for squeezing over at the table.

Recipe notes

Tips

  • For cleaner grains, rinse the jasmine rice thoroughly and let it steam off the heat with the lid on so it finishes fluffy.
  • If you want deeper char on the sweetcorn, leave it undisturbed for 30 to 60 seconds at a time before stirring.
  • Eggs should be cooked until the whites are fully set; if serving to pregnant people, young children, or anyone vulnerable, cook the yolks through.

Substitutions

  • Replace minced beef with minced turkey for a lighter bowl.
  • Replace mild chili powder with smoked paprika for a smokier, less spicy flavour.
  • Replace fresh corn on the cob with frozen corn, cooked in the pan until well browned.

Storage

  • Refrigerate up to 2 days
  • Store the rice and beef and beans together in an airtight container; keep the salsa and avocado separate. Reheat the rice and beef and beans in a saucepan with a splash of water over a low heat until piping hot, then top with freshly cooked egg, salsa and avocado.
