Nordic Wild Mushroom and Pearl Barley Bowl
Why this recipe works
- Earthy depth: Browning the mushrooms in butter concentrates their savoury flavour before garlic, thyme and lemon are added.
- Chewy and creamy: Pearl barley keeps a pleasant bite, while crème fraîche softens the bowl with a cool, creamy finish.
- Freshness against richness: Lemon zest and juice cut through the butter and mushrooms, keeping the dish bright rather than heavy.

Ingredient notes
- Choosing mushrooms: A mix of wild mushrooms gives the most character, but cultivated mushrooms still work well if cooked until their moisture evaporates and the edges brown.
- Use fresh, firm mushrooms: Avoid mushrooms that feel slimy or overly wet, as they are harder to brown and can make the pan juices taste flat.
- Adjust the lemon at the end: Add lemon juice gradually after the mushrooms have cooked, tasting as you go so the acidity lifts the dish without overpowering it.
Common mistakes
- Overcrowding the mushrooms: If the pan is too full, the mushrooms steam instead of browning. Cook them in a wide pan and give them space where possible.
- Using heat that is too low: Medium-high heat helps drive off mushroom moisture and develop golden edges before the garlic and thyme are added.
- Adding garlic too early: Garlic only needs a short cook once the mushrooms are browned; adding it at the start can make it catch before the mushrooms are ready.
Make-ahead tips
- Cook the barley ahead: The barley can be cooked in advance, cooled, and refrigerated, then warmed through with the mushrooms before serving.
- Keep the crème fraîche separate: Store the warm components separately from the crème fraîche and parsley so the topping stays fresh and creamy.
- Reheat gently: Warm leftovers in a frying pan with a splash of water until piping hot, then finish with the crème fraîche and parsley just before serving.

Ingredients
Instructions
- Cook the pearled barley in a saucepan of well-salted boiling water until tender with a little bite, 25–30 minutes. Drain well in a colander and return it to the pan off the heat to steam-dry for 1 minute.
- While the barley cooks, wipe and trim the mushrooms, then tear or slice any large ones so they cook evenly. Finely chop the garlic, pick the thyme leaves, and finely chop the parsley. Zest the lemon, then cut it in half for juicing.
- Melt the butter in a large frying pan over a medium-high heat. Add the mushrooms and cook, stirring occasionally, for 8–10 minutes until they have released their liquid and turned golden at the edges.
- Stir in the garlic and thyme and cook for 1 minute until fragrant. Season with the black pepper and a pinch of the salt, then add the lemon zest and squeeze in about half the lemon juice. Taste and add more lemon juice and salt as needed.
- Divide the barley between two bowls and spoon the mushrooms and buttery pan juices over the top. Finish each bowl with a spoon of crème fraiche and a generous sprinkle of parsley. Serve straight away while hot.
Recipe notes
Tips
- For the best browning, let the mushrooms sit undisturbed for a couple of minutes at a time before stirring, and avoid overcrowding the pan.
- If the mushrooms start to catch before they colour, lower the heat slightly and keep stirring; they will brown once their moisture has cooked off.
- If serving anyone vulnerable, make sure the mushrooms are cooked until piping hot throughout.
Substitutions
- Replace Crème fraiche with Greek yogurt for a lighter, tangier finish.
- Replace Fresh thyme with Fresh parsley for a softer herb flavour, stirring most through the mushrooms and saving a little to finish.
Storage
- Refrigerate up to 2 days
- Store the barley and mushrooms together in an airtight container; keep the Crème fraiche separate if possible. Reheat gently in a frying pan with a splash of water until piping hot, then add the Crème fraiche and Fresh parsley to serve.
