Peruvian-Style Aji Chicken Bowl with Rice and Avocado
Why this recipe works
- Layered flavour: Aji amarillo paste brings fruity chilli depth, while garlic, cumin and lime give the chicken a savoury, aromatic marinade.
- Balanced textures: Juicy sliced chicken, fluffy rice, tender sweetcorn and creamy avocado make the bowl feel complete without needing a heavy sauce.
- Easy to serve: The components can be plated warm or assembled as a prepared lunch, with the dressing added just before serving.

Adjust the heat
- For gentler heat: Use a little less aji amarillo paste and lean on extra lime and coriander for brightness.
- For more warmth: Increase the aji amarillo paste slightly, tasting the marinade before adding the chicken.
Ingredient notes
- Aji amarillo paste: This Peruvian chilli paste is known for its fruity, rounded heat rather than sharp chilli intensity.
- Choose firm-ripe avocado: Use an avocado that gives slightly when pressed so it slices cleanly and holds its shape in the bowl.
Make-ahead tips
- Keep fresh elements separate: Store the chicken, rice and sweetcorn together, but keep the avocado and dressing separate until serving.
- Reheat before assembling: Warm the chicken and rice until piping hot, then add the avocado and coriander-lime dressing off the heat.
Serving ideas
- Finish with extra lime: Serve with lime wedges for a sharper, fresher finish at the table.
- Add a crisp side: A simple tomato, cucumber or cabbage salad works well alongside the warm rice and chicken.

Instructions
- In a bowl, mix the aji amarillo paste, finely grated garlic, the juice of 1 lime, ground cumin, 1 tsp of the fine sea salt, 1 tbsp of the olive oil and the black pepper (if using). Add the chicken thighs and turn to coat well. Set aside to marinate while you cook the rice.
- Rinse the basmati rice until the water runs mostly clear, then tip into a saucepan with the water and 0.5 tsp of the fine sea salt. Bring to the boil, cover and cook on the lowest heat for 10 minutes. Remove from the heat and leave covered for 5 minutes, then fluff with a fork.
- Bring a small pan of water to the boil and cook the sweet corn kernels for 2 to 3 minutes until hot and tender. Drain well and set aside. If using the same saucepan as the rice, do this once the rice is resting.
- Heat 1 tbsp of the olive oil in a frying pan over a medium-high heat. Add the chicken thighs in a single layer and cook for 5 to 6 minutes per side, until deeply browned and cooked through. Transfer to a board and rest for 3 minutes before slicing.
- Finely chop the fresh coriander and stir it with the remaining 1 tbsp olive oil, the juice of the remaining lime, and the remaining 0.5 tsp fine sea salt. Slice the avocado. Taste the dressing and adjust with a little more lime juice if you want it sharper.
- Divide the rice between two bowls and top with the sweet corn, sliced chicken and avocado. Spoon over the coriander and lime dressing. Serve straight away while the chicken is still warm.
Recipe notes
Tips
- For the juiciest chicken, let it rest after frying, then slice across the grain.
- If you are cooking for someone vulnerable, make sure the chicken is piping hot all the way through with no pink remaining.
Substitutions
- Replace basmati rice with jasmine rice for a slightly softer, more fragrant base.
- Replace fresh coriander with fresh flat-leaf parsley if you prefer a milder herb flavour.
- Replace olive oil with avocado oil for a more neutral dressing and frying fat.
Storage
- Refrigerate up to 2 days
- Store the chicken, rice and sweet corn in an airtight container in the fridge; keep the avocado and dressing separate. Reheat the chicken and rice in a microwave until piping hot, then add fresh avocado and spoon over the dressing just before serving.
