Nikkei Ceviche with Leche de Tigre

Nikkei ceviche brings the sharp freshness of Peruvian ceviche together with Japanese-influenced savoury depth. Here, chilled sushi-grade sea bass is briefly cured in lime so it stays tender rather than firm, then dressed with an ice-cold leche de tigre flavoured with aji amarillo, ginger, garlic, coriander and soy sauce. Sweet potato and toasted corn are served alongside in the classic ceviche spirit, adding sweetness, nuttiness and crunch against the bright citrus and gentle chilli heat. It is a clean, vibrant dish best assembled at the last moment and served very cold.

Why this recipe works

  • Bright acidity: Fresh lime cures the fish lightly while keeping the flavour clean, sharp and refreshing.
  • Savoury depth: Fish stock, soy sauce, ginger and garlic give the leche de tigre more depth than citrus alone.
  • Contrasting textures: Tender sea bass is served with chilled sweet potato and toasted corn for sweetness, crunch and balance.

Adjust the heat

  • For gentler heat: Use less aji amarillo paste at first, then taste the leche de tigre before adding more.
  • For more warmth: Increase the aji amarillo gradually so the chilli stays bright rather than overpowering the lime and fish.
  • Keep the balance: If the dressing tastes too hot, extra lime juice or a little more chilled stock can soften the heat.

Timing notes

  • Serve immediately: Ceviche is at its best just after mixing, while the fish is cold and only lightly cured.
  • Best the same day: Prepare the components ahead if needed, but combine the fish, lime and leche de tigre only shortly before serving.
  • Keep everything cold: Chilling the sweet potato, corn, dressing and serving bowls helps preserve the clean flavour and firm texture.

Ingredient notes

  • Choose fish carefully: Use sushi-grade sea bass from a trusted supplier and keep it well chilled throughout preparation.
  • About aji amarillo: Aji amarillo paste brings fruity chilli heat and a distinctive Peruvian flavour to the leche de tigre.
  • Taste for sharpness: Limes vary in acidity, so adjust the final dressing by taste before it goes over the fish.

Make-ahead tips

  • Prepare components ahead: The sweet potato, toasted corn and leche de tigre can be made in advance and chilled separately.
  • Keep fish and dressing separate: Store the cut fish apart from the leche de tigre, then mix only when ready to serve.
  • Do not hold once mixed: Once the fish is dressed, the texture continues to change, so avoid storing the finished ceviche for long.

  1. Peel the sweet potato and cut into 2 cm chunks. Boil in lightly salted water for 10 to 12 minutes until just tender, then drain and cool completely. Chill in the fridge while you prepare the rest.
  2. Toast the sweet corn kernels in a dry frying pan over medium heat for 4 to 6 minutes, stirring, until lightly golden and nutty. Tip onto a plate to cool. Once cool, chill until serving.
  3. Make the leche de tigre: in a blender, combine the fish stock, ginger, garlic, soy sauce, aji amarillo paste, the juice of 2 limes, and a small handful of coriander leaves. Blend until very smooth, then pass through a sieve into a bowl. Chill until ice-cold.
  4. Finely slice the red onion and place in a bowl with the juice of 1 lime; toss and leave for 5 minutes to soften. Cut the sea bass into bite-sized cubes and keep chilled. Roughly chop the remaining coriander leaves.
  5. Just before serving, add the sea bass to a chilled bowl and squeeze over the remaining lime juice. Pour over enough cold leche de tigre to generously coat, then add most of the onion and coriander and gently toss. Leave for 3 to 5 minutes until the fish turns opaque on the outside but remains tender.
  6. Divide the ceviche between two plates, spooning over a little extra leche de tigre. Add the chilled sweet potato and toasted corn alongside, then finish with the remaining onion and coriander. Serve immediately while cold.

Recipe notes

Tips

  • Use sushi-grade sea bass and keep it well chilled throughout; if you are serving anyone who is pregnant, elderly, immunocompromised, or very young, use cooked fish instead.
  • Chill the serving bowls or plates for 10 minutes so the ceviche stays properly cold and the flavours stay bright.
  • If you prefer a milder heat, start with half the aji amarillo paste in the leche de tigre, taste, then add the rest.

Substitutions

  • Replace sea bass with salmon for a richer, softer-textured ceviche.
  • Replace soy sauce with light soy sauce for a slightly lighter, cleaner saltiness.
  • Replace fish stock with water for a brighter, less savoury leche de tigre.

Storage

  • Refrigerate up to 1 days
  • Ceviche is best eaten straight away. If needed, keep the fish and leche de tigre separate in the fridge and combine just before serving; do not store once mixed for more than a few hours.
