Lighter Chiles Rellenos (Baked Stuffed Poblano Chillies)
Why this recipe works
- Classic comfort, lighter finish: Baking the stuffed poblanos gives a tender, cheesy result without the heaviness of a fried batter.
- Bright tomato salsa: Passata, lime and cumin create a warm, tangy sauce that cuts through the richness of the mozzarella.
- Creamy, sweet filling: Mozzarella melts around the sweetcorn, giving the chillies a soft filling with small bursts of sweetness.

Timing notes
- Rest before peeling: Let the roasted poblanos sit briefly after the first roast; the steam helps loosen the skins and makes them easier to peel without tearing.
- Best served hot: Serve once the cheese has fully melted and the salsa is warm, while the chillies are tender and the filling is still soft.
Texture tips
- Use a firmer cheese if needed: Low-moisture mozzarella gives a less watery filling than very fresh mozzarella, which can release more liquid as it bakes.
- Roast until collapsed: The poblanos should blister and begin to soften before stuffing; under-roasted chillies are harder to peel and less tender once filled.
Ingredient notes
- Choose large poblanos: Larger chillies are easier to peel, seed and stuff while keeping their shape.
- Adjust the lime at the end: Add lime juice after the salsa has simmered so the acidity stays fresh rather than cooked out.
Make-ahead tips
- Store chillies and salsa apart: Keep the stuffed chillies and salsa in separate containers so the sauce does not soften the chillies further in the fridge.
- Reheat gently: Warm the chillies in a 200°C (390°F) oven until piping hot, and heat the salsa separately in a saucepan before serving.

Instructions
- Heat the oven to 220°C (430°F). Put the poblanos in a baking dish, drizzle with 1 tbsp of the olive oil, and sprinkle with 0.25 tsp of the fine sea salt. Roast for 18 to 22 minutes, turning once, until blistered and starting to collapse.
- Meanwhile, finely chop the red onion and crush the garlic. Warm the remaining 1 tbsp olive oil in a saucepan over a medium heat, then cook the onion with a pinch of the salt for 5 to 6 minutes until softened. Stir in the garlic and ground cumin and cook for 30 seconds until fragrant.
- Pour in the tomato passata and bring to a gentle simmer. Cook for 8 to 10 minutes, stirring occasionally, until slightly thickened, then season with the remaining salt. Take off the heat and squeeze in half the lime juice.
- Tip the sweet corn kernels into a bowl. Tear or dice the mozzarella, then mix it through the corn with a little chopped fresh coriander and the remaining lime juice. Set aside a small handful of coriander for serving.
- When the poblanos are cool enough to handle, peel away the loosened skin. Make a slit down one side of each chilli and remove the seeds, keeping the chilli intact. Stuff each chilli with the mozzarella and sweetcorn mixture, then return them to the baking dish.
- Bake for 10 to 12 minutes until the filling is melted and the chillies are tender. Warm the salsa gently if needed, then spoon it over the chillies. Finish with the reserved fresh coriander and serve straight away.
Recipe notes
Tips
- For easier peeling, let the roasted poblanos sit in the baking dish for 5 minutes after roasting; the trapped steam helps loosen the skins.
- Keep the salsa at a gentle simmer rather than a rapid boil so it thickens without splattering.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the chillies are piping hot throughout and the cheese is fully melted.
Substitutions
- Replace Mozzarella with low-moisture mozzarella for a firmer, less watery filling.
- Replace Fresh coriander with a smaller amount of fresh parsley for a milder herbal finish.
- Replace Lime with lemon for a similar brightness in the salsa and filling.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate the stuffed chillies and salsa in separate airtight containers. Reheat the chillies in a 200°C (390°F) oven for 12 to 15 minutes until piping hot; warm the salsa gently in a saucepan.
