Pan-Seared Chicken with Pico de Gallo (Tomato, Lime and Coriander Salsa)
Why this recipe works
- Fresh acidity: Lime juice and ripe tomatoes cut through the savoury chicken, keeping the dish light rather than heavy.
- Simple spice base: Cumin and ancho chilli powder add warmth and gentle smokiness without needing a long marinade.
- Weeknight-friendly: The salsa is made while the chicken cooks, so the whole dish comes together efficiently in one active cooking session.

Adjust the heat
- Make it milder: Remove the jalapeño seeds and use less chilli in the salsa for a fresher, gentler finish.
- Add more heat: Keep some jalapeño seeds in the pico de gallo, or add extra fresh chilli to taste.
- Keep the heat balanced: If the salsa tastes too sharp or hot, add more tomato and coriander to soften the bite.
Ingredient notes
- Use ripe tomatoes: Ripe vine tomatoes give the pico de gallo better sweetness, juiciness and colour.
- Fresh coriander matters: Fresh coriander brings the clean, citrusy lift that dried herbs cannot replicate in a raw salsa.
- Adjust the lime: Taste the salsa before serving and add a little more lime if the tomatoes need extra brightness.
Texture tips
- Rest before topping: Let the chicken rest briefly before spooning over the salsa so the juices settle and the surface stays nicely seared.
- Watch the second side: Lower the heat if the spices begin to darken too quickly, and stop cooking as soon as the chicken is cooked through.
Make-ahead tips
- Store separately: Keep the cooked chicken and pico de gallo in separate airtight containers so the salsa stays fresh and the chicken reheats cleanly.
- Reheat gently: Warm the chicken in a frying pan with a splash of water until piping hot, then add the cold salsa just before serving.
- Best served fresh: The pico de gallo has the brightest flavour and best texture on the day it is made.

Ingredients
Instructions
- Pat the chicken dry, then season all over with the fine sea salt, ground cumin and ancho chili powder. Rub with 1 tbsp of the extra virgin olive oil.
- Make the pico de gallo: halve the cherry tomatoes, finely dice the red onion, and finely chop the jalapeno pepper (remove the seeds for less heat). Finely grate or crush the garlic, chop the fresh coriander, then squeeze in the lime juice and add the remaining 1 tbsp olive oil; mix well.
- Heat a frying pan over medium-high heat. Add the chicken and cook for 5 to 7 minutes on the first side until well browned.
- Turn and cook for a further 5 to 7 minutes, lowering the heat to medium if the spices start to catch. The chicken is ready when it feels firm and the juices run clear.
- Rest the chicken on plates for 3 minutes. Spoon the pico de gallo over the top and serve straight away.
Recipe notes
Tips
- For the juiciest result, take the chicken off the heat as soon as it is cooked through, then rest it before topping with the pico de gallo.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the chicken is cooked all the way through and serve immediately.
Substitutions
- Replace the jalapeno pepper with half as much jalapeno pepper for a milder pico de gallo.
- Replace the ancho chili powder with ground cumin for a warmer, less smoky spice profile.
Storage
- Refrigerate up to 2 days
- Store the chicken and pico de gallo separately in airtight containers. Reheat the chicken in a frying pan over medium heat with a splash of water until piping hot, then top with the cold pico de gallo just before serving.
