Traditional Pastitsio (Greek Baked Pasta with Meat and Béchamel)
Why this recipe works
- Warm, layered flavour: The beef sauce builds depth from softened onion, garlic, tomato passata, cinnamon and black pepper.
- Thick, creamy topping: A firm béchamel sits on top of the meat sauce rather than sinking, giving the finished bake its distinctive golden cap.
- Neat slices: Coating the hot macaroni with egg and cheese helps the pasta layer set so the pastitsio can be cut into defined portions.

Authenticity notes
- Greek baked pasta: Pastitsio is known for its structured layers: pasta on the base, spiced meat sauce in the middle and a generous béchamel topping.
- Kefalotyri cheese: Kefalotyri gives the dish its salty, savoury finish. Parmesan is a practical substitute, though it gives a slightly different character.
- Pasta shape: Macaroni works well, while ziti or another straight tube pasta gives a more traditional layered look.
Timing notes
- Plan the stages: The recipe has several components, but the work is straightforward: simmer the sauce, cook the pasta, make the béchamel, then assemble and bake.
- Rest before slicing: Let the pastitsio stand for 15 minutes after baking so the béchamel and pasta layer firm up enough to cut cleanly.
- Serve warm, not straight from the oven: It is easiest to portion once the bubbling has settled but the centre is still hot and soft.
Common mistakes
- Cooking the pasta too far: Boil the macaroni just shy of al dente; it continues cooking in the oven and can become too soft if fully cooked first.
- Thin meat sauce: Simmer the beef sauce until thick. Excess liquid can seep into the pasta layer and make the slices less defined.
- Loose béchamel: The béchamel should be very thick and glossy before assembly so it stays as a distinct top layer during baking.
Make-ahead tips
- Cook components ahead: The meat sauce can be made in advance and chilled, which makes assembly more manageable on the day of serving.
- Freeze portions: Cool completely, then wrap portions well and freeze. Thaw overnight in the fridge before reheating.
- Reheat gently: Warm slices in a 180°C (355°F) oven until piping hot, covering loosely if the top is browning too quickly.

Instructions
- Heat the oven to 180°C (355°F). Finely chop the onion and crush the garlic, then grate the kefalotyri cheese.
- Heat the olive oil in a saucepan over medium heat and cook the onion with a pinch of the salt for 8 to 10 minutes until soft and lightly golden. Stir in the garlic for 1 minute until fragrant.
- Add the minced beef and cook for 8 to 10 minutes, breaking it up, until browned and any liquid has evaporated. Stir in the cinnamon, black pepper and remaining salt, then pour in the passata.
- Simmer the meat sauce gently for 20 to 25 minutes until thick and rich, stirring occasionally. Taste and adjust with a little more black pepper if you like, then take off the heat.
- Bring a large pot of well-salted water to the boil and cook the macaroni until just shy of al dente. Drain well and return it to the pot.
- Beat the eggs in a bowl, then stir them through the hot macaroni so they lightly coat the pasta. Mix in 120 g of the kefalotyri cheese, reserving the rest for the topping.
- For the béchamel, melt the butter in a saucepan over medium heat. Add the flour and cook, stirring, for 2 minutes until it smells biscuity but has not browned.
- Gradually whisk in the milk until smooth, then cook for 6 to 8 minutes, whisking often, until very thick and glossy. Stir in the nutmeg and a small pinch of black pepper, then take off the heat.
- Assemble in a baking dish: spread the macaroni in an even layer, then spoon over the meat sauce. Pour the béchamel on top and smooth it to the edges.
- Bake for 35 to 40 minutes until the top is golden and the edges are bubbling. Sprinkle over the remaining kefalotyri cheese and bake for 5 minutes more to melt.
- Rest for 15 minutes so it sets, then slice and serve. The centre should hold together in neat portions.
Recipe notes
Tips
- Cook the macaroni a minute less than you normally would, as it will finish cooking in the oven and stay nicely defined in slices.
- Keep the béchamel at a gentle simmer and whisk often; it should be thick enough to sit on top of the meat sauce without sinking.
- If serving vulnerable groups, make sure the pastitsio is baked until piping hot all the way through before resting and slicing.
Substitutions
- Replace Kefalotyri cheese with Parmesan for a similar salty, savoury finish.
- Replace Macaroni with Ziti pasta for a more traditional tube shape that layers neatly.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat slices in a 180°C (355°F) oven for 15 to 20 minutes until piping hot; cover loosely if the top is browning too quickly. Freeze well-wrapped portions for up to 2 months and thaw overnight in the fridge before reheating.
