Côtelettes d’Agneau with Flageolet Beans (Lamb Cutlets and Beans)
Why this recipe works
- Layered savoury flavour: Shallot, garlic, rosemary and stock give the beans depth without overpowering the lamb.
- Creamy bean base: A gentle simmer lets the flageolet beans soften while the liquid reduces into a silky sauce.
- Classic pairing: Lamb and flageolet beans are a familiar French combination, with the beans balancing the richness of the meat.

Timing notes
- Rest the lamb before serving: A short rest helps the juices settle, so the cutlets stay tender when plated over the beans.
- Serve once the butter is stirred in: The beans are best served while glossy and warm, just after the butter has melted into the reduced stock.
Texture tips
- Dry the lamb well: Patting the cutlets dry before searing encourages browning and helps a crust form quickly in the hot pan.
- Keep the bean simmer gentle: A steady, low simmer keeps the flageolet beans intact while allowing them to turn creamy.
Ingredient notes
- Use flageolet beans if available: Flageolets have a delicate flavour and creamy texture that suit lamb particularly well.
- Fresh rosemary works best: A whole sprig perfumes the beans and the lamb pan, then can be removed before serving.
- Butter finishes the sauce: Stirring in butter at the end rounds out the stock and gives the beans a polished, savoury finish.
Make-ahead tips
- Prepare the beans ahead: The bean base can be cooked in advance and reheated gently with a little extra stock if needed.
- Store lamb and beans separately: Keeping the components apart helps the beans reheat evenly and reduces the risk of overcooking the lamb.
- Reheat gently: Warm the beans in a saucepan and reheat the lamb briefly in a 180°C (355°F) oven until piping hot.

Ingredients
Instructions
- Finely slice the shallots and thinly slice the garlic. Set a large frying pan over medium heat and a saucepan over medium-low heat.
- Warm 1 tbsp olive oil in the saucepan, then cook the shallots with a pinch of salt for 3 to 4 minutes until softened. Stir in the garlic and cook for 30 seconds until fragrant.
- Add the flageolet beans, chicken stock and 1 rosemary sprig to the saucepan. Bring to a gentle simmer, then cook for 15 to 20 minutes, stirring occasionally, until the beans are tender and the liquid is slightly reduced.
- While the beans simmer, pat the lamb chops dry and season with salt. Heat the remaining 1 tbsp olive oil in the frying pan over medium-high heat until shimmering, then add the lamb and the remaining rosemary sprig.
- Sear the lamb chops for 2 to 3 minutes per side for medium-rare, or a little longer to your liking, turning once. Transfer to a plate and rest for 5 minutes; discard the rosemary sprig from the pan.
- Remove the rosemary sprig from the beans, then stir in the unsalted butter until glossy and silky. Taste and adjust seasoning, then spoon the beans onto plates and top with the rested lamb chops.
Recipe notes
Tips
- For the best sear, make sure the lamb chops are dry before they hit the pan and do not move them until a crust forms.
- Keep the beans at a gentle simmer rather than a rapid boil so they stay intact and turn creamy as the stock reduces.
- If serving anyone who is pregnant, elderly, or immunocompromised, cook the lamb until well done and piping hot throughout.
Substitutions
- Replace Chicken stock with Vegetable stock for a lighter, meat-free base.
- Replace Fresh rosemary with Fresh thyme for a softer, more delicate herbal note.
- Replace Unsalted butter with Olive oil for a dairy-free finish, adding it off the heat for a silky texture.
Storage
- Refrigerate up to 2 days
- Cool the lamb and beans quickly, then refrigerate in separate airtight containers. Reheat the beans gently in a saucepan with a splash of chicken stock until piping hot; warm the lamb briefly in a 180°C (355°F) oven for 6 to 8 minutes to avoid overcooking.
