Vietnamese Coconut Curry Bowl with Chicken and Jasmine Rice

Vietnamese-style coconut curry bowls bring together a creamy, gently spiced sauce with the clean fragrance of jasmine rice. Here, chicken breast is simmered in coconut milk with bruised lemongrass, ginger, garlic and curry powder, giving the curry warmth without heavy heat. Fish sauce adds savoury depth, while lime and fresh herbs keep the finish bright and aromatic. Served over rice, it makes a complete, practical bowl: soft grains, tender chicken and a lightly thickened sauce that feels comforting but still fresh.

Why this recipe works

  • Aromatic depth: Lemongrass, ginger, garlic and curry powder build a fragrant base before the coconut milk is added.
  • Creamy but balanced: Coconut milk gives the curry body, while lime and fresh herbs keep the finished bowl light and bright.
  • Straightforward method: The chicken cooks directly in the sauce, so there is no separate browning or complicated technique to manage.

Ingredient notes

  • Bruise the lemongrass well: Bashing the stalk releases its citrusy aroma into the sauce while keeping the fibrous pieces easy to remove before serving.
  • Season after the fish sauce: Fish sauce adds salt as well as savoury depth, so taste the curry after adding it before adjusting the seasoning.
  • Add lime at the end: Stirring in lime juice just before serving keeps the flavour fresh and prevents the acidity from becoming flat during simmering.

Texture tips

  • Keep the simmer gentle: Once the coconut milk is in the pan, avoid a hard boil to help the sauce stay smooth and creamy.
  • For juicier chicken: Boneless, skinless chicken thighs can be used instead of breast; simmer until tender and cooked through.

Make-ahead tips

  • Store rice and curry separately: Keeping the rice separate helps preserve its texture and makes reheating easier.
  • Freeze without herbs: The curry can be frozen after cooking, but add coriander and basil only after reheating for the freshest finish.
  • Reheat gently: Warm the curry slowly until piping hot, adding a little water if the sauce has thickened in the fridge.

  1. Rinse the jasmine rice until the water runs mostly clear. Tip into a saucepan with the water and fine sea salt, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes.
  2. Meanwhile, thinly slice the onion, finely chop the garlic, and grate the ginger. Trim the lemongrass, then bash it with the side of a knife to bruise and release its aroma. Cut the chicken into bite-sized pieces and season with the black pepper.
  3. Heat the vegetable oil in a large frying pan over a medium heat. Add the onion with a pinch of fine sea salt and cook for 5 to 6 minutes until softened. Stir in the garlic, ginger, lemongrass and curry powder, and cook for 1 minute until fragrant.
  4. Add the chicken and stir to coat in the spices, cooking for 2 to 3 minutes until the outside turns opaque. Pour in the coconut milk and bring to a gentle simmer. Cook for 10 to 12 minutes, stirring occasionally, until the chicken is cooked through and the sauce lightly thickens.
  5. Stir in the fish sauce, then squeeze in the lime juice to taste. Remove and discard the lemongrass. Divide the rice between bowls, ladle over the curry, and finish with fresh coriander and fresh basil.

Recipe notes

Tips

  • Keep the curry at a gentle simmer once the coconut milk is added, as a hard boil can cause the sauce to split.
  • For a cleaner lemongrass flavour, bruise it well and remove it before serving so nobody bites into a fibrous piece.
  • If serving to anyone who is pregnant, elderly, or immunocompromised, ensure the chicken is cooked until piping hot throughout.

Substitutions

  • Replace chicken breast with chicken thighs (boneless, skinless) for a juicier result; simmer for a few extra minutes until tender.
  • Replace fresh basil with extra fresh coriander for a more herb-forward finish.
  • Replace lime with lemon for a similar brightness, adding it off the heat to keep the flavour fresh.

Storage

  • Refrigerate up to 3 days
  • Cool the curry and rice quickly, then refrigerate in separate airtight containers. Reheat the curry gently in a saucepan until piping hot, adding a splash of water if needed; reheat the rice in the microwave with a spoonful of water. Freeze the curry (without herbs) for up to 2 months and defrost overnight in the fridge before reheating.
