Crema Catalana all’Italiana (Lemon and Cinnamon Set Custard)

A chilled set custard with a crackling caramelised sugar lid, this dessert sits somewhere between crema catalana and an Italian crema pasticcera-style pudding. The custard is cooked on the hob rather than baked, with egg yolks and cornflour giving it a smooth, spoonable set, while lemon zest, cinnamon and vanilla bring a warm citrus perfume. Served cold in individual ramekins and torched just before eating, it offers the familiar pleasure of creamy custard against a thin, glassy top. It is well suited to making ahead, provided the sugar crust is finished at the last moment.

Why this recipe works

  • Smooth set custard: Egg yolks, dairy and cornflour thicken gently into a glossy custard that firms as it chills.
  • Gentle aromatic flavour: Lemon zest, cinnamon and vanilla infuse the dairy before thickening, giving the custard fragrance without overpowering it.
  • Crisp caramel top: Caramelising the sugar just before serving creates a brittle layer that contrasts with the cold, creamy base.

Timing notes

  • Allow enough time to set: The custards need to be fully cold before serving, so plan for several hours of chilling after cooking.
  • Caramelise at the last moment: Torch the sugar shortly before serving; the caramel top will soften if it sits in the fridge.

Texture tips

  • Strain for a smooth finish: Passing the custard through a sieve removes zest, spice specks and any small cooked egg particles.
  • Keep the heat gentle: Cook over medium-low heat and whisk constantly so the yolks thicken evenly rather than turning grainy.
  • Dry the surface first: A dry custard surface helps the caster sugar caramelise into a cleaner, more even crackly topping.

Ingredient notes

  • Use unwaxed lemon if possible: Because the zest is infused directly into the dairy, unwaxed lemon gives a cleaner citrus flavour.
  • Cream affects the set: Double cream gives a richer, firmer custard; a lighter cream will produce a softer finish.

Make-ahead tips

  • Prepare the custards in advance: The chilled custards can be made ahead and kept covered in the fridge until needed.
  • Keep the sugar topping separate: Do not caramelise the sugar before storing, as the crisp layer will lose its texture in the fridge.

  1. Set 4 ramekins on a tray that will fit in the fridge. Using a fine grater, zest the lemon into a saucepan, then add the milk, cream, ground cinnamon, vanilla and salt.
  2. Warm the pan over medium heat until steaming and just starting to bubble at the edges, 5 to 7 minutes. Take off the heat and leave to infuse for 10 minutes.
  3. In a mixing bowl, whisk the egg yolks with 80 g of the caster sugar until slightly paler, then whisk in the cornflour until smooth. Rewarm the milk mixture briefly if needed, then slowly whisk it into the yolk mixture to temper.
  4. Return everything to the saucepan and cook over medium-low heat, whisking constantly, for 4 to 6 minutes until thick and glossy. Once it starts to blip, cook for 30 seconds more, then take off the heat.
  5. Strain the custard through a sieve into a jug, then divide between the ramekins. Cool for 20 minutes, then chill until fully set and cold, at least 3 hours.
  6. Just before serving, sprinkle the remaining 40 g caster sugar in a thin, even layer over the tops. Caramelise with a kitchen blowtorch until deep golden and glassy, then leave for 2 minutes to harden before serving.

Recipe notes

Tips

  • Keep the heat medium-low when thickening the custard and whisk constantly so it stays silky and does not catch on the base of the pan.
  • For the cleanest crackly top, chill the custards uncovered for the last 30 minutes so the surface is dry before adding the caster sugar.
  • Food safety: this dessert contains egg yolk; serve to vulnerable groups only if you use pasteurised egg yolk and ensure the custard is cooked until properly thickened.

Substitutions

  • Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
  • Replace Double cream with Whipping cream for a lighter custard, noting it will set slightly softer.

Storage

  • Refrigerate up to 2 days
  • Store the chilled custards covered in the fridge for up to 2 days. Caramelise the caster sugar topping only just before serving, as it will soften in the fridge.
