Classic Banana Pudding
Why this recipe works
- Light, creamy custard: Cooked vanilla custard is folded with softly whipped cream, giving the pudding a smooth, airy finish rather than a dense set.
- Better after chilling: Resting in the fridge lets the custard firm up gently while the biscuit crumbs soften into the layers.
- Gentle sweetness: Firm-ripe bananas bring natural sweetness, while the vanilla custard keeps the flavour mellow and rounded.

Timing notes
- Chill before serving: Allow at least 60 minutes in the fridge after assembly so the layers settle and the biscuits soften slightly.
- Cool the custard fully: Let the cooked custard cool before folding in the cream; warm custard can loosen the texture and reduce volume.
Texture tips
- Strain for a smooth finish: Passing the custard through a sieve removes any small cooked egg or cornflour lumps before chilling.
- Keep the heat moderate: Whisk continuously while thickening the custard and avoid boiling hard, which can make the egg yolks curdle.
Ingredient notes
- Choose firm-ripe bananas: Bananas should be sweet and fragrant but still firm enough to slice cleanly and hold their shape in the layers.
- Biscuit choice matters: Digestive crumbs give a slightly wheaty, crumbly layer; ladyfinger crumbs create a softer, more cake-like texture.
- Use pasteurised yolk when needed: For pregnant people, young children, older adults or anyone immunocompromised, pasteurised egg yolk is the safer choice.
Make-ahead tips
- Prepare in advance: The pudding can be assembled and refrigerated ahead of serving, making it useful for relaxed entertaining.
- Best within two days: Keep covered in the fridge for up to 2 days; the bananas may darken and the biscuit layer will continue to soften.

Instructions
- Pour the whole milk into a saucepan and warm over medium heat until steaming but not boiling. Stir in the vanilla extract and fine sea salt.
- In a mixing bowl, whisk the egg yolk with the caster sugar until slightly paler, then whisk in the cornflour until smooth. While whisking constantly, slowly pour in about a third of the hot milk to temper the yolks.
- Pour the tempered yolk mixture back into the saucepan and cook over medium heat, whisking continuously, until thickened and bubbling. Keep whisking for 1 minute to cook out the cornflour, then take off the heat.
- Strain the custard through a sieve into a clean bowl for an extra-smooth finish. Cover the surface directly and cool to room temperature, then chill until cold.
- Whisk the double cream until softly thickened, then fold it through the cold custard until smooth and light. Taste and keep chilled while you prepare the layers.
- Slice the bananas. In a serving dish, layer a third of the digestive biscuit crumbs, a third of the custard, and a third of the bananas; repeat twice more, finishing with custard on top.
- Chill the pudding for at least 60 minutes so the layers meld and the biscuits soften slightly. Serve cold, spooning down through the layers.
Recipe notes
Tips
- Keep the heat moderate when thickening the custard and whisk constantly so it does not catch on the base of the pan.
- For the neatest layers, chill the custard until fully cold before folding in the double cream and assembling.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised egg yolk.
Substitutions
- Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
- Replace Digestive biscuit crumbs with ladyfinger crumbs for a lighter, more cake-like layer.
- Replace Double cream with whipping cream, whisked to soft peaks before folding into the custard.
Storage
- Refrigerate up to 2 days
- Cover and refrigerate for up to 2 days; the bananas will darken slightly and the biscuits will continue to soften. Serve straight from the fridge.
