Pollo alla Diavola (Spicy Italian Roast Chicken)
Why this recipe works
- Even, fast roasting: Spatchcocking flattens the chicken so the thighs and breast cook more evenly at high heat.
- Crisp, well-coloured skin: Drying the chicken and starting it on a preheated tray helps the skin roast rather than steam.
- Bright finish: Lemon squeezed over at the table cuts through the spicy olive oil rub and lifts the roast chicken.

Adjust the heat
- For less heat: Replace some of the hot paprika with sweet paprika while keeping the garlic, rosemary and olive oil base.
- For extra fire: Use a hotter paprika or add chilli flakes to the paste before rubbing it over the chicken.
- Keep it balanced: Serve with plenty of lemon so each portion can be sharpened and refreshed at the table.
Timing notes
- Most of the time is hands-off: The active work is spatchcocking and seasoning; the oven does the main cooking.
- Rest before carving: A 10-minute rest helps the juices settle, giving cleaner carving and juicier meat.
- Best served promptly: Serve soon after resting while the skin is still crisp and the lemon finish tastes fresh.
Authenticity notes
- Flattened chicken, fierce heat: The recognisable alla diavola style relies on a flattened bird cooked over strong heat with assertive spice.
- Oven-friendly approach: A very hot oven and preheated tray give a practical home-kitchen version of the intense heat usually associated with this dish.
Common mistakes
- Do not skip the hot tray: Putting the chicken onto a cold tray slows browning and makes crisp skin harder to achieve.
- Dry the skin thoroughly: Moisture on the chicken encourages steaming, so pat it dry before adding the paprika paste.
- Check the thickest part: The thigh should reach 74°C (165°F), especially when serving anyone vulnerable to foodborne illness.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Put a baking tray in the oven to preheat while you prepare the chicken.
- Spatchcock the chicken by cutting out the backbone with kitchen scissors or a sturdy knife, then turn it over and press firmly on the breastbone to flatten. Pat the chicken dry all over with kitchen paper.
- Crush the garlic to a paste with the hot paprika, fine sea salt and black pepper, then stir in the olive oil. Strip the rosemary leaves from the sprigs and mix them into the paste.
- Rub the paste all over the chicken, including under the skin over the breast and thighs where you can. Leave at room temperature while the oven finishes heating.
- Carefully remove the hot tray from the oven and set the chicken on it, skin-side up. Roast for 40 to 50 minutes, turning the tray once, until the skin is deeply golden and the thickest part of the thigh reaches 74°C (165°F).
- Rest the chicken for 10 minutes before carving so the juices settle. Cut the lemon into wedges and serve alongside for squeezing over the chicken at the table.
Recipe notes
Tips
- For the crispest skin, make sure the chicken is thoroughly dry before seasoning and roast it on a preheated tray.
- If you do not have a thermometer, pierce the thickest part of the thigh: the juices should run clear and the meat should feel tender, not rubbery.
- If serving anyone who is pregnant, elderly, or immunocompromised, cook the chicken until it is fully done and piping hot throughout.
Substitutions
- Replace fresh rosemary with 1 tsp dried rosemary, crushed between your fingers before mixing into the paste.
- Replace lemon with lime for a sharper, more aromatic citrus finish.
Storage
- Refrigerate up to 3 days
- Cool leftovers quickly, then refrigerate in a sealed container for up to 3 days. Freeze carved chicken for up to 2 months; defrost overnight in the fridge and reheat in a 180°C (355°F) oven until piping hot.
