Ribollita (Tuscan Bread and Vegetable Soup)
Why this recipe works
- Deep savoury base: Slowly softened onion, carrot and celery give the soup a rounded foundation before the tomatoes, rosemary and greens are added.
- Bread-thickened texture: Torn stale bread absorbs the broth and turns the soup thick, rustic and spoonable without needing cream or flour.
- Better as it settles: The beans, greens and bread continue to absorb flavour as the soup rests, making it well suited to reheating.

Authenticity notes
- Tuscan style: Ribollita is known for its thick, rustic texture; it should feel closer to a vegetable-and-bread stew than a clear broth.
- Built around stale bread: Using day-old bread is central to the dish, as it softens into the soup and gives body without becoming completely smooth.
- Simple, generous serving: A drizzle of good extra virgin olive oil at the table is the classic finishing touch and brings richness to the vegetables.
Ingredient notes
- Choose sturdy bread: Sourdough or country-style bread holds its shape better than soft sandwich bread and gives the soup a more satisfying texture.
- Strip tough kale stems: Removing the thick stems keeps the greens tender and prevents fibrous pieces in the finished soup.
- Season after the beans: Canned beans and stock vary in saltiness, so taste near the end and adjust the seasoning only once the soup has thickened.
Timing notes
- Rest before serving: Letting the pot stand off the heat gives the bread time to absorb the broth fully and helps the flavours settle.
- Expect it to thicken: Ribollita becomes thicker as it sits; loosen it with a little extra stock when reheating if you prefer a softer consistency.
Make-ahead tips
- Good for the next day: The soup keeps well in the fridge and often tastes more rounded after the bread and beans have absorbed the broth.
- Reheat gently: Warm it in a saucepan over low heat, stirring often and adding a little stock if it has become too thick.
- Freeze in portions: Cool quickly, freeze in sealed portions, then defrost in the fridge before reheating until piping hot throughout.

Instructions
- Heat the olive oil in a large pot over medium heat. Finely chop the onion, carrot and celery, then add to the pot with the salt and pepper. Cook for 10 to 12 minutes, stirring often, until softened and lightly golden.
- Add the garlic and rosemary and cook for 1 minute until fragrant. Stir in the tomato purée for 1 minute, then add the tomatoes and cook for 2 to 3 minutes to thicken slightly.
- Pour in the vegetable stock and bring to a gentle simmer. Shred the savoy cabbage and strip the kale leaves from any tough stems, then add both to the pot. Simmer for 25 minutes, stirring occasionally, until the greens are tender.
- Add the cannellini beans and simmer for 10 minutes. Use a wooden spoon to mash some of the beans against the side of the pot to thicken the soup, keeping it rustic rather than smooth.
- Tear the sourdough bread into rough pieces and stir it into the soup. Simmer gently for 8 to 10 minutes, stirring, until the bread has softened and the soup is thick and spoonable. Taste and adjust with a little more salt and pepper if needed.
- Take the pot off the heat and let the ribollita stand so the bread fully absorbs the broth. Remove the rosemary sprigs before serving. Ladle into bowls and finish with a drizzle of olive oil if you like.
Recipe notes
Tips
- Keep the simmer gentle once the bread goes in, and stir regularly so it does not catch on the base of the pot.
- For a thicker, more traditional texture, mash a few more beans into the broth before adding the bread.
- If serving vulnerable groups, ensure the soup is reheated until piping hot throughout.
Substitutions
- Replace sourdough bread with country bread for a milder flavour and softer crumb.
- Replace kale with savoy cabbage for a sweeter, more delicate green.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat, adding a splash of vegetable stock if it has become very thick, until piping hot. Freeze in portions for up to 3 months and defrost overnight in the fridge before reheating.
