Mango Pandan Coconut Smoothie Bowl
Why this recipe works
- Fast to make: Everything blends in minutes, with only the coconut flakes needing a brief toast for extra aroma and texture.
- Naturally spoonable: Ripe banana and coconut milk give the bowl body, while ice keeps the mixture cold and thick.
- Fresh tropical balance: Mango brings sweetness and brightness, pandan adds fragrance, and toasted coconut gives a nutty finish.

Ingredient notes
- Choose ripe mango: Use mango that is fragrant and fully ripe for the best sweetness and a smoother blend.
- Using pandan: Fresh or frozen pandan leaves both work; trim away tough ends so the leaves blend more evenly.
- Coconut topping: Unsweetened coconut flakes give a larger, crispier finish, while desiccated coconut toasts faster and tastes finer.
Texture tips
- For a thicker bowl: Use the mixture straight from the blender and avoid adding extra liquid unless the blades cannot move.
- For a smoother blend: Cut the pandan leaves into short lengths and scrape down the blender as needed so the fibres incorporate properly.
- Watch the coconut: Toast the coconut only until lightly golden, then remove it from the pan so it does not darken further.
Timing notes
- Serve immediately: The bowl has the best thick, frosty texture straight after blending.
- Cool the topping: Let the toasted coconut cool briefly before adding it so it stays crisp without warming the smoothie base.
Equipment you'll need
Ingredients
Instructions
- Toast the coconut flakes in a dry frying pan over a medium heat for 2 to 4 minutes, stirring, until lightly golden. Tip out to cool.
- Trim the pandan leaves into short lengths so they blend smoothly, discarding any tough ends. Peel the banana, then cut the mango flesh away from the stones; reserve a few pieces of mango for topping.
- Add most of the mango, the coconut milk, pandan leaves, banana and ice cubes to a blender. Blend until thick, cold and spoonable, scraping down the sides as needed.
- Divide between two bowls and top with the reserved mango and toasted coconut flakes. Serve straight away while it stays thick.
Recipe notes
Tips
- If the bowl is too thick to blend, add a small splash more Coconut milk and pulse just until it moves.
- For a stronger pandan fragrance, blend for an extra 30 seconds, then taste and adjust by blending a little longer rather than adding more liquid.
Substitutions
- Replace Coconut milk with Coconut milk beverage for a lighter flavour; reduce the Ice cubes slightly to keep it spoonable.
- Replace Coconut flakes with Desiccated coconut if that is what you have; toast gently as it colours faster.
Storage
- Serve immediately for the best texture. If you must hold it, refrigerate for up to 2 hours and re-blend briefly with a few Ice cubes before serving.
