Vegetarian Kapsalon Bowl (Layered Fries with Mushrooms and Gouda)

Kapsalon is a Dutch loaded-fries dish, typically layered with spiced meat, melted cheese, crisp salad and garlic sauce, then served hot so the toppings mingle without losing their bite. This vegetarian version keeps the familiar structure but swaps in browned cremini mushrooms and onions seasoned with cumin, paprika and garlic for a savoury, shawarma-style topping. Gouda melts into the fries, while romaine, cucumber, lemon and garlicky yoghurt bring freshness and tang. It is hearty enough for dinner, but still has the crisp, creamy, hot-and-cold appeal that makes kapsalon so satisfying.

Why this recipe works

  • Hot-and-cold contrast: Crisp fries, melted Gouda, browned mushrooms and chilled salad give the bowl the layered texture that makes kapsalon distinctive.
  • Shawarma-style depth: Cumin, paprika, garlic and browned mushrooms create a savoury topping with enough richness to stand in for the traditional meat.
  • Freshness cuts through: Lemon-dressed salad and garlic yoghurt balance the cheese and fries, keeping the bowl from feeling heavy.

Authenticity notes

  • Kapsalon structure: Classic kapsalon is built in layers: fries first, then a hot savoury topping, melted cheese, cool salad and garlic sauce.
  • Vegetarian adaptation: Spiced mushrooms replace shawarma-style meat while keeping the browned, savoury character of the dish.

Texture tips

  • For crisper fries: Spread the potatoes out well on the baking tray so they roast at the edges rather than steam.
  • Keep the salad crisp: Add the lettuce, cucumber and yoghurt sauce only after the cheese has melted and the bowls are ready to serve.

Ingredient notes

  • Choose mushrooms that brown well: Cremini mushrooms give a deeper savoury flavour than very mild white mushrooms, especially once their moisture has cooked off.
  • Use a good melting cheese: Gouda melts smoothly and suits the Dutch character of the dish; cheddar gives a sharper result if preferred.

Make-ahead tips

  • Store in separate parts: Keep the fries and mushroom topping apart from the salad and garlic yoghurt so the fresh components stay crisp.
  • Reheat before assembling: Warm the fries and mushrooms in a 200°C (390°F) oven until piping hot, then finish with the cold salad and sauce.

  1. Heat the oven to 220°C (430°F). Cut the potatoes into thin fries, then toss on a baking tray with 1 tbsp of the sunflower oil and a pinch of salt.
  2. Bake the fries for 25 to 30 minutes, turning once, until deep golden and crisp at the edges. While they bake, get on with the topping and salad.
  3. Slice the onion and mushrooms. Finely grate the garlic, then in a bowl mix the Greek yogurt with half the garlic and a squeeze of lemon juice; season with salt and pepper and set aside as the garlic sauce.
  4. Heat the remaining 1 tbsp sunflower oil in a large frying pan over medium-high heat. Cook the onion for 5 minutes until softened and starting to colour, then add the mushrooms and cook for 6 to 8 minutes until browned and any liquid has cooked off.
  5. Stir in the remaining garlic, ground cumin and sweet paprika and cook for 1 minute until fragrant. Season well with salt and pepper, then take off the heat.
  6. Grate the Gouda. When the fries are ready, divide them between two ovenproof bowls or a small baking dish, spoon over the spiced mushrooms and onion, then scatter over the Gouda.
  7. Return to the oven for 4 to 6 minutes, just until the cheese is melted and bubbling. Meanwhile, shred the romaine lettuce and slice the cucumber; toss with a little lemon juice and a pinch of salt.
  8. Top each hot bowl with the lettuce and cucumber. Finish with generous spoonfuls of the garlic sauce and serve straight away.

Recipe notes

Tips

  • For the best texture, spread the fries in a single layer so they roast rather than steam.
  • Let the mushrooms brown properly before adding the spices; once the pan is dry and the edges are golden, the flavour is at its best.
  • If serving anyone who is pregnant, elderly, very young, or immunocompromised, use pasteurised Greek yogurt and keep the hot components piping hot.

Substitutions

  • Replace Gouda cheese with cheddar cheese for a sharper, more robust topping.
  • Replace Greek yogurt with crème fraîche for a richer garlic sauce.
  • Replace sunflower oil with olive oil for a fruitier roast and sauté.

Storage

  • Refrigerate up to 2 days
  • Store the fries and mushroom topping separately from the lettuce, cucumber and garlic sauce. Reheat the fries and mushrooms in a 200°C (390°F) oven until piping hot, then add the cold salad and sauce just before serving.
