Lamb Rogan Josh (British-Indian Style)

Rogan josh is a richly spiced lamb curry, recognisable for its deep red sauce, tender meat and warming aromatic flavour. In this British-Indian style version, the sauce is rounded with tomatoes and yoghurt, giving it body, gentle tang and a mellow heat from cumin, coriander, cardamom and hot paprika. Slow simmering is key: it softens the lamb while allowing the spiced onion base to thicken into a full, savoury gravy. Served with basmati rice and fresh coriander, it makes a satisfying curry-night dinner with enough depth for a weekend meal but a method that stays practical for home cooking.

Why this recipe works

  • Built-in depth: Onion, garlic and ginger are cooked first, then the ground spices are briefly warmed before the lamb and tomatoes go in, giving the sauce a fuller flavour.
  • Tender, hearty result: A long, gentle simmer gives the lamb time to soften and lets the sauce reduce into a rich curry that works especially well with plain basmati rice.
  • Tangy balance: Tomatoes and yoghurt cut through the richness of the lamb, keeping the finished curry rounded rather than heavy.

Adjust the heat

  • For a milder curry: Use a gentler paprika in place of hot paprika and keep the simmer low so the spice flavour stays warm rather than sharp.
  • For more heat: Choose a hotter paprika or add extra chilli heat gradually, tasting the sauce once it has simmered and mellowed.
  • Keep the heat rounded: Serve with plain rice and stir in the yoghurt gently; the dairy helps soften the spice while adding body to the sauce.

Authenticity notes

  • British-Indian style: This version reflects a British-Indian curry approach, using tomato and yoghurt for a rich, tangy sauce rather than aiming to replicate every regional rogan josh tradition.
  • Paprika-led warmth: Hot paprika provides colour and warmth here, making the curry approachable while still giving it a recognisably spiced character.

Common mistakes

  • Boiling after adding yoghurt: Add the yoghurt a spoonful at a time and keep the curry at a very gentle simmer; strong boiling can make the sauce split.
  • Stopping before the lamb is tender: Lamb stew meat needs time to soften. If the sauce thickens before the meat is ready, loosen it with a splash of water and continue simmering gently.
  • Scorching the spices: Ground spices only need a short time in the pan before the lamb is added; stirring constantly helps prevent bitterness.

Make-ahead tips

  • Good for making ahead: The curry can be made in advance and often tastes fuller after resting, as the spices have more time to settle into the sauce.
  • Freeze without the rice: Freeze the curry on its own, then cook fresh basmati rice when serving for the best texture.
  • Reheat gently: Warm the curry over low heat, stirring often and adding a splash of water if the sauce has thickened too much.

Instructions

  1. Finely chop the onion. Crush the garlic and finely grate the ginger; roughly chop the tomatoes and coriander.
  2. Heat the sunflower oil in a Dutch oven over medium heat. Add the onion with a pinch of the salt and cook for 10 minutes, stirring, until soft and lightly golden.
  3. Stir in the garlic and ginger for 1 minute until fragrant. Add the ground cumin, ground coriander, ground cardamom and hot paprika, and cook for 30 seconds, stirring constantly.
  4. Add the lamb and turn to coat in the spiced onion mixture. Cook for 5 to 7 minutes, stirring, until the lamb has lost its raw colour.
  5. Add the tomatoes and 300 ml water, then bring to a gentle simmer. Cover and cook on low for 60 minutes, stirring occasionally, until the lamb is starting to turn tender.
  6. Stir in the yogurt a spoonful at a time so it blends smoothly, then keep the curry at a very gentle simmer. Cook uncovered for 15 to 20 minutes until the sauce is thickened and the lamb is tender; season with the remaining salt to taste.
  7. Meanwhile, rinse the basmati rice until the water runs clearer. Bring 600 ml water to the boil in a saucepan, add the rice and simmer for 10 to 12 minutes until tender, then drain well and cover for 5 minutes to steam.
  8. Stir most of the fresh coriander through the curry, reserving a little to finish. Serve the rogan josh over the rice and scatter over the remaining coriander.

Basmati rice

Tips

  • Keep the curry at a gentle simmer after adding the yogurt; boiling can cause it to split.
  • If the sauce thickens too quickly, loosen it with a splash of water and continue simmering until the lamb is tender.
  • If serving vulnerable groups, use pasteurised yogurt and ensure the curry is piping hot throughout before serving.

Substitutions

  • Replace hot paprika with smoked paprika for a smokier, less sharp heat.
  • Replace yogurt with greek-yogurt for a thicker, creamier sauce.

Storage

  • Refrigerate up to 3 days
  • Cool the curry quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat, stirring often, until piping hot; add a splash of water if needed. Freeze the curry (without rice) for up to 3 months and defrost overnight in the fridge before reheating.
