Chicken Pot Pie with Flaky Pastry Crust
Why this recipe works
- Silky filling: Flour-thickened stock and double cream create a sauce that stays rich and spoonable after baking.
- Built-in savoury depth: Leek, carrot, bay and thyme flavour the sauce as the chicken gently simmers, giving the filling more character than a plain white sauce.
- Flaky pastry contrast: Puff pastry bakes directly over the hot filling, turning deep golden while the creamy chicken mixture bubbles underneath.

Ingredient notes
- Use chicken thighs for tenderness: Boneless, skinless thighs stay juicy during simmering and baking, making them well suited to a creamy pie filling.
- Choose good puff pastry: All-butter puff pastry gives the crust a cleaner flavour and better flake than many standard versions.
- Thyme can be flexible: Fresh thyme gives a softer herbal note, while dried thyme is more concentrated and should be used more sparingly.
Texture tips
- Let the pastry brown fully: Bake until the crust is puffed and deeply golden; pale pastry is more likely to taste underdone and soft.
- Adjust a thin sauce before baking: If the filling looks loose in the pan, simmer it a little longer before adding it to the dish.
- Keep the chicken gentle: A steady, gentle simmer helps the chicken cook through without toughening and reduces the risk of the sauce splitting.
Common mistakes
- Adding stock too quickly: Whisk the stock in gradually after the flour so the sauce thickens smoothly rather than turning lumpy.
- Skipping the rest: Let the pie stand briefly after baking so the sauce settles and serves cleanly.
- Sealing without a steam hole: Cutting a small vent allows steam to escape, helping the pastry bake rather than steam.
Make-ahead tips
- Make the filling in advance: The chicken filling can be cooked ahead, cooled completely and refrigerated before topping with pastry and baking.
- Reheat in the oven: Reheat portions in a 180°C (355°F) oven until piping hot, loosely covering the pastry if it browns too quickly.
- Freeze in portions: Freeze cooled portions for longer storage, then thaw overnight in the fridge before reheating.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Slice the leek and cut the carrot into small, bite-sized pieces.
- Melt the butter in a saucepan over medium heat. Add the leek and carrot with the salt and cook for 6 to 8 minutes until softened but not coloured.
- Stir in the plain flour and cook for 1 minute, stirring constantly. Gradually whisk in the chicken stock until smooth, then add the bay leaves, thyme and black pepper.
- Add the chicken thighs and bring to a gentle simmer. Cook for 12 to 15 minutes, stirring occasionally, until the chicken is just cooked through and the sauce has lightly thickened.
- Turn off the heat and stir in the double cream, then fold in the frozen peas. Remove and discard the bay leaves and thyme sprigs, then tip the filling into a baking dish.
- Lay the puff pastry over the dish and trim the edges, pressing to seal. Cut a small steam hole in the centre; if using the egg, beat it and brush over the pastry.
- Bake for 25 to 30 minutes until the pastry is puffed and deep golden and the filling is bubbling at the edges. Rest for 10 minutes before serving so the sauce settles slightly.
Recipe notes
Tips
- Keep the simmer gentle when cooking the chicken so it stays tender and the sauce does not split.
- If the sauce looks thin before baking, simmer it for 2 to 3 minutes longer; it will thicken further in the oven.
- If serving to pregnant people, young children, or anyone immunocompromised, use pasteurised egg for the glaze or skip the egg wash.
Substitutions
- Replace Chicken thighs with Chicken breast for a leaner filling; reduce the simmering time by 2 to 3 minutes to avoid drying out.
- Replace Double cream with Cooking cream for a lighter sauce, noting it will be slightly less rich.
- Replace Fresh thyme with Dried thyme, using a smaller amount as it is more concentrated.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven for 20 to 25 minutes until piping hot; cover loosely if the pastry is browning too quickly. Freeze in portions for up to 2 months and thaw overnight in the fridge before reheating.
